Ängssyra glass🇸🇪 Igår gjorde vi en underbart god hemgjord glass smaksatt med ängssyra. Vi plockade ängssyra, mixade med socker och äggulor och blandade med uppkokt grädde med glukossirap. Vi serverade glassen på en bädd av ovispad grädde och toppade med hemgjorda mini maränger. Ängssyran gör att glassen får en sån otrolig friskhet! Ängssyra finns att köpa på kruka i vissa matbutiker om ni inte hinner plocka själva💚 Inspiration kommer från en dessert vi åt på @hobosthlm

på Quinoburgers gjorda av vår ekologiska quinoa.
"Så här fantastiskt ser våra quinoaburgare ut! Superenkelt att göra 🍔
För 6 st burgare:
Koka 4 dl Scandinavian Quinoa. Låt svalna ordentligt!
Tillsätt salt, peppar, hackad färsk koriander eller persilja, några eko champijoner, 2 st hackade tomater.
Som bindningsmedel använd 1.5 dl eko potatismjöl. Du kan stärka upp lite extra med dinkelkli men då blir den inte glutenfri.
Jag använder 2 matskedar ekologisk kallpressad olivolja.
Knåda ihop quinoafärsen och använd en hamburgarpress.
Låt quinoburgarna kylas en halvtimme i kylen el i frysen så att konsistensen hinner formas.
Grilla gärna på ved och pensla quinoaburgarna med olivolja under grillning.

So tonight I decided to make a stir fry using frozen veggies. Not too bad... and now I have dinner tonight and my next two lunches sorted. Sweet!
Grass Fed Gelatine Gummies- beneficial in improving the gut lining, feeding good bacteria in the gut leading to improved immune and digestive function. Can also improve integrity of the connective tissue ( skin, hair, nails). Here are my gummie recipes
Coconut MCT gummies:
4 scoops of gelatine and 1 cup water.. stir until jelly like.
Warm 1 tin coconut cream, 1/8 teaspoon of stevia powder and 1 tbsp MCT oil.
Add warm liquid to gelatine mixture and stir until dissolved. Add to moulds and refrigerate for 1-2 hours until hard.
4 scoops of gelatine and 1 cup of water combined until mixture is jelly like.
Warm 300mls of water with 1/8 tsp stevia powder, 2 tbsp frozen blueberries, 2 tbsp MCT oil. Blend with stick blender. Once boiling, combine with gelatine mixture until dissolved. Leave aside to cool for 10 minute and add 1.5 cups of kombucha.
Put into moulds and allow to set in fridge for 1-2 hours.
First time cooking with Pearl or Israeli couscous. Doesn’t look like much, but just like normal couscous when treated with respect and cooked in stock and some other lovelies it’s actually amazing! The texture is similar to barley but with less bite... I think this might be the beginning of a beautiful friendship! Serving this as part of an Israeli Couscous Salad (recipe by @recipe_tin
) as an accompaniment to a slow cooked herb and garlic lamb leg. There will be plenty of left overs do lunches are sorted for tomorrow ☺️

'Green Eggs & Ham', with Crispy Shredded Sweet Potato
Calories: 716kcal (or 583kcal)

Yep... it was so delicious! Here's a new and really interesting way to prepare Sweet Potato - to shred it and fry it in coconut oil until it browns. It has a bit of crisp, whilst still being soft, buttery and a hint of sweetness. Chuck an egg on that too, with some fresh Avocado and a Parma Ham Salad and... voila! Mouth watering and thoroughly satisfying due to the healthy fats and flavours running throughout. As I'm on a mini-cut (short calories restricted diet), I'm skipping breakfast and dealing down lunch, which allows me to keep dinners about the same. This is a perfect light Lunch or post workout meal if supplemented with a protein shake. For a lower calorie option, reduce to one Egg and 150g of Sweet Potato and save 133kcal.
