This is my favorite, super simple stew. Lentil and sweet potato stew! 1 onion 3 cloves garlic Olive oil 1 large sweet potato 2 medium red potatoes 2 cups lentils 1/2 tsp tumeric 1/4 tsp cumin 2 bay leaves 6 cups veg broth Salt & pepper Saute onion and garlic until fragrant Throw in all ingredients except salt and pepper. Boil then simmer on low for 30 mins. I used to ❤️ @kraftrecipes Zesty Italian vinaigrette so much back in the day...😋 I honestly put that 💩 on everything‼️😜 The macros on the Kraft stuff honestly aren’t that bad (1.5 g carbs & 2.5 g of fat per tbsp), but it’s also made with both soybean & canola oils + a small amount of sugar.👎 This dupe has 1/2 a gram of carbs & 10 g of fat per tbsp, so although it’s calorically much more dense, it’s also loads more #nutrientdense with the fresh prebiotic aromatics (shallot, red pepper, garlic), fermented vinegars (ACV & red wine vinegars, both with the mother), & healthy fats from pure avocado 🥑 oil. But you do get better with practice. Texture appears to be the key to me keeping healthy. Yesterday I didn’t prep, which led me to eat all sorts of junk. Not trying to be harsh on myself, you do need cheat days. But I felt terrible. I came home with the worse headache. High intake of plant fiber is needed for healthy bowel movements and may be associated with a decrease risk of cancer, heart disease, and numerous other chronic diseases. Though science is just beginning to unravel the complexity of our gut microbiome, it is clear that food entering the colon has profound effects on the composition and metabolic activity of these bacteria. Some species of gut bacteria appear to thrive on a high-fiber diet, while others prefer to metabolize fat or protein. The by-products of fiber fermentation, particularly butyrate, appear to have highly beneficial effects on bowel function. Butyrate and other products of fermentation are acidic, lowering the pH of stool and decreasing the ability of bile acids to form highly carcinogenic secondary bile acids.  Butyrate also helps to maintain proper intestinal barrier function, which may help decrease the risk of various auto-immune and inflammatory diseases, including Crohn’s disease. When animal protein and fat putrefy in the colon, they can produce ammonia, which can cause abnormal cell division and DNA synthesis. Luckily, the presence of fiber in the colon during protein degradation can minimize ammonia production. Sulfur-containing amino acids, found highly concentrated in animal products, are metabolized by bacteria to hydrogen sulphide. The beginnings of a salsa verde 😛 roast before blending for deeper flavor! 〰️ Toss tomatillos, onion, jalapeño pepper, & garlic in olive oil and then broil for about 10 minutes. When blending, add fresh cilantro, lime juice, & salt (optional addition: avocado).

Simple and quick pesto pasta for lunch today 👌🏼 In my opinion pasta is something so easy to make. I can throw a pot full of water on the burner, let the pasta cook, and then make a sauce for it in the mean time. It probably takes me about 15-20 minutes to make any pasta dish, so it’s ideal for someone who’s busy like me. I used my favorite pesto sauce, which you can find in my blog! Then poured the sauce over @eatbanza penne and added some steamed kale for extra greens 🌱 I then topped it all with @traderjoeslist bruschetta for added freshness! Simple and delish 😋

In honour of Canada's New Food Guide being released (after 11 years of waiting), I'm posting a stir fry that is based of my favourite recommendation... to eat more plant based protein! In this case, it's coming from the edamame. 🌱 Edamame (soy beans) are a COMPLETE protein (rare for plant based protein) as they contain ALL 9 essential amino acids (amino acids are the building blocks of protein)! 1 cup of edamame also contains 17 grams of protein! 💪🏻This week, challenge yourself to try to go meatless and include 2 meals that contain plant based protein! Recipe below for 1 serving⬇️ . . . Ingredients 1/2 tsp sesame oil 1 cup broccoli florets 1/2 red bell pepper sliced 4-6 mushrooms, quartered 3/4 cup frozen edamame 0.25 cup low sodium vegetable broth 2 tsp reduced sodium soy sauce 1 tsp corn starch 1 tbsp cold water 1/2 cup cooked brown rice 1 tbsp sesame seeds Directions Heat sesame oil in a fry pan over medium heat. Once hot, add broccoli florets and cook for 2-4 minutes. Add red pepper and cook for another 3-5 minutes. Add mushrooms and edamame and cook until mushrooms begin to release their water. Add in broth and soy sauce. Cook until veggies are almost cooked. Mix corn starch with water and slowly add to broth. Stir constantly until thickened and until veggies are cooked. Serve over brown rice and top with sesame seeds!

The new Canada food guide was released today and it focuses heavily on fruits, vegetables and grains. Meat and dairy were eliminated as a food group and the protein section discusses how to get protein from plants. This looks very similar to the USDA plate. The governmental bodies around the world are catching up with the science. The World Health Organization has favored a plant based diet, and the experts panel to the USDA suggested including wording that emphasizes the need to decrease meat. The US World and News report recently asked experts to rate different diets and the top three were all predominantly plant based diets. The lowest marks were earned by Keto diet, which actually got several stern warnings. Dr. Valter Longo is one of the world’s premier researchers on aging. In his new book, The Longevity Diet, he emphasizes an almost vegetarian diet for longevity. At this point the science is very clear. Fast food doesn’t have to be junk food. Hit up your grocery store’s salad bar and hot bar to make a totally delicious, nutritious, and quick salad to go. I combined baked salmon and roasted veggies from the hot bar with salad greens, marinated mushrooms, roasted red peppers, and raw veggies from the salad bar @harristeeter. Totally satisfied! And yes, lots of chewing required with salads - so you do have to slow down and enjoy it! 😋 . Slice the mushrooms + sprouts thinly. 2. Heat the pan on medium add the oil. 3. Add the mushrooms + sprouts cook for 4 mins 4. Add the kale , cook for 2 minutes. 5. Move to one side and crack the eggs. 6. Cook until your liking. 7. Add the avocado on top. 8. I know a lot of you are in full-blown @whole30 mode, so here’s one of my favorite whole30-friendly recipes from one of my books. Don’t say I never did anything for you. ⠀⠀⠀ SWEET POTATO PUMPKIN CHILI: ⠀⠀⠀ ⠀⠀⠀⠀ ⠀⠀⠀⠀ ⠀⠀⠀⠀ ⠀ • 1 tsp salt • 2 tbsp chili powder • 2 tsp ground cumin • 1 tsp dried oregano • 1/2 tsp ground cinnamon • 1 tsp unsweetened cocoa powder • 1/4 tsp ground allspice • 2 tbsp ghee or olive oil • 1 small white onion, finely diced • 2 cloves garlic, minced • 1 lb grass-fed ground beef • 2 medium sweet potatoes, peeled and diced • 1 (15-ounce) can pumpkin puree • 1 (15.5-ounce) can fire-roasted diced tomatoes • 2 cups beef broth • Cilantro, avocado, and olives for garnish ⠀⠀⠀ ⠀⠀⠀⠀ ⠀ Mix spices in a small bowl. Set aside. Heat ghee or olive oil in a large stockpot over medium heat. Add onions and garlic and cook until translucent, about 5 minutes. Add beef and cook until no longer pink. Add spice mixture and stir until incorporated. Add remaining ingredients (except garnishes) and stir until combined. Simmer over low heat for 1 hour.
