#Repost @healthyfresheats ・・・ RAW BLUEBERRY VEGAN CHEESECAKES 🍰🍇 • They taste like the real thing! • Ingredients: Crust: 1 cup of dates 1 cup of walnuts Filling: 1 1/2 cup of cashews 1 large lemon juiced 1/3 cup of coconut oil 1/2 cup + 2 tbsp of coconut milk 1/2 cup of honey (or sub maple syrup) 1/3 cup of blueberries • Method: -Blend dates and set aside, then blend walnuts. -Add dates to blender with walnuts and blend until they are well mixed. -Set aside. -Blend cashews until fully processed and add to mixing bowl. -Add the rest of the wet ingredients to bowl and mix. *When adding in coconut milk, make sure to use all of the thick cream at the top of the can* -Add all of the wet ingredients to blender to get rid of any clumps. -Lightly grease a muffin tin and add in crust mixture to the bottom of each slot. -Pour filling on top. -Microwave frozen blueberries and place a small amount into centre of each filling. -Take a toothpick and swirl it around to create a cool design! -Place in freezer for 4-6 hours *This recipe makes 10 cheesecakes* • Tip: I found it a bit difficult to get the cheesecakes out after freezing so to make this easier you could cut up a piece of parchment paper into the size of a paper tab and set it underneath with the ends poking out on each side. individuals who ate cruciferous vegetables such as kale at least once a week lowered their risk of oral, colorectal, and breast cancers by 17%, and slashed the risk of esophagus and kidney cancers by 28 and 32%, respectively. However, kale may be superior to other cruciferous options in its cancer-prevention effects, owing to an especially rich source of glucosinolates, which are converted by the body into cancer-preventive compounds called isothiocyanates.12 These complex compounds are powerful inducers of both cancer-destroying enzymes and inhibitors of carcinogenesis. As a result of these various compounds, kale has been demonstrated to substantially reduce the risk of many cancers,15 including some of the deadliest forms, such as cancer of the pancreas,16 breast,17-20 colon,21 and esophagus. Although the exact anticancer mechanism for each of kale’s complex compounds is not known, the sulforaphane component alone has been shown to modulate cell death, cell cycle, angiogenesis, susceptibility to carcinogens, cancer invasion and metastasis, and anti-inflammatory activities. Other research reveals that sulforaphane helps support a healthy immune system, which is a key component in staving off cancer. It significantly enhances production of several chemicals involved in the immune response, such as interferon-gamma.24 And the water-soluble fraction of kale has been shown to stimulate production of immunoglobulin in human cells. Conspicuously, sulforaphane has been shown to selectively target precancerous and cancerous cells. Happy Sunday! 😊 I hope you all are having a wonderful time. I haven’t had time to create anything these past few days; so, I’m serving up one of my favourite recipes which I’ve shared before- I received many positive feedbacks on this one so far; so, I’m hoping you’ll give this one a try if you haven’t already! 🤤 This is for those of you who are looking for an easy recipe to enjoy before the weekend ends- allow me to introduce you to the ultimate comfort food for vegans who love Chinese takeaways/ takeouts: 🙌 Sweet and Sour Tofu 🌱 ❤️ Ingredients: 🍍 • 250 g pineapple chunks (1 fresh pineapple weighted at about 500-600 g and use the rest of pineapple for juicing) • 150 g onion, diced • 240 g capsicum, diced • 120 g tomato, diced • 250 g tofu, cubed 😍 Sweet and Sour Sauce: • 1/2 cup pineapple juice • 2 tbs light soy sauce • 1/8 cup white vinegar • 1/8 cup brown sugar • 2 tbs ketchup • 1 tbs corn flour • 1/4 tsp Himalayan salt* (Or sea salt, whichever one you have) - combine all the ingredients in a bowl for later use. Instructions: 1. Fry tofu in coconut oil until golden brown or BAKE until the outside crisps up nicely. 2. Sauté onion and capsicum with a tablespoon of coconut oil for a few minutes before adding tomato and pineapple chunks. 3. Continue to cook on medium heat until all the vegetables (and fruits) are cooked and nicely seared. 4. Add the sauce and stir quickly to prevent lumps, let simmer for 10 seconds or until the sauce becomes clear. 5. Add tofu and fold everything together. Sprinkle some roasted white sesame seeds on top and serve hot with a side of steamed rice. 6. Sharing this recipe in between delayed flights! Pasta with pesto, olives, tomatoes and leaves, great for warm weather and can be kept in the fridge for 2-3 days. For 1 person you need: - 100 gr of pasta - 5 cherry tomatoes - a handful of mixed rocket and spinach leaves - 5 green olives - 2 tbsp of pesto (I've found a nice vegan one with cashews) - Salt, pepper Cook the pasta in hot water for about 10 min (cooking time depending on the pasta type). When the pasta are ready, add the pesto, the tomatoes and olives cut in half and the leaves. Mix everything together. Season with salt and pepper. Can be eaten warm or cold. 💕🌱An earthy and sweet beetroot, pomegranate and spelt salad. 🌱💕Boil a cup of Italian spelt in water for 25 minutes. Finely grate or chop a beetroot, 2 carrot, 8 radishes and half a red cabbage. Mix with the juice of a lime, a dash of olive oil, chopped mint and s&p. Top with pomegranate seeds and crumbled feta (optional) and it’s good to go 👣

Still trying to figure out what to bring to a Memorial Day BBQ? How about this delicious avocado pesto pasta side dish made with Miracle noodles!! Top it with your favorite BBQ protein or use as the perfect side dish! - Ingredients: ▪️Half an avocado (about 80g) ▪️10 basil leaves ▪️20 g spinach ▪️Lemon juice (about half a lemon to taste) ▪️1/4 clove garlic ▪️1/4 of a shallot (about 5g) ▪️20 g grape tomatos ▪️1 package Miracle Noodles Directions: 1. Prepare Miracle Noodles as stated on the packaging. Once cooked, allow to cool. 2. Place avocado, basil, spinach, garlic, shallot, lemon juice, salt and pepper into a blender and blend until all smooth. 3. Pour avocado pesto over the noodles and mix. Top with grape tomatoes and your favorite grilled protein (in my case Beyond Meat Chicken strips). #miraclenoodleambassador

I love a big breakfast on the weekends - made quinoa and red lentils, put some in a gluten free tortilla wrap, and since I know I’ll want more, put some on the side with a sautéed spinach / tomato topping.
