These are not pretty and shapely like a regular brownie, but I’m digging these chewy, rich, chocolaty, not too sweet brownies. It’s vegan, flourless, gf, nut free, dairy free, and refined sugar free. Without the flour, the rich dark chocolate taste really shines in these moist brownies. Idk why but I had a massive craving for muffins last night so me and seany made some choc chip muffins today ❤ super tasty even tho I forgot to put the baking powder in 🙈 still worked out cos it was self raising flour but yeah, they don't look as big as they usually do 😅
Carrot cake muffins with cinnamon buttercream anyone?
I made these lil sandwich cakes for my mums visit this week & because I forgot to put cinnamon in the cake (I’m an idiot) I chose to add it to the frosting instead and it worked just as well 🙏🏻.
For 9 cakes:
• 2C plain flour
• 3/4C coconut sugar
• 2tsp baking powder
• 1/2tsp salt
• 1/2C oat milk + 1tsp apple cider vinegar
• 1/4C oil
• 1tbsp soy yoghurt
• 2 grated carrots
• 100g vegan spread
• 120g icing sugar • 2-3tsp cinnamon
Whisk the milk and vinegar in a jug, add in the oil, yoghurt and sugar and whisk until combined.
Mix dry ingredients into a bowl and then stir in the wet mixture.
Transfer to muffins trays and bake at 180C for around 20-25minutes.
Whilst cooking, make the buttercream by beating together the ingredients - then slice cakes in half and fill 😋.

☀️ 🏖 Okay, so to me shortbreads we’re always a Christmas treat, but I found the recipe for Lemon and Lavender cookies in the @loveandlemons
cookbook and my opinion has changed! I didn’t have any fresh Lavender so I used fresh thyme instead and YUM. This recipe isn’t vegan in the cookbook, but I veganized it by replacing butter with Vegan Margarine. 🍪 ☀️

caramel vanilla blondies mix earlier this week and my mind is 🤯...and I may have already eaten a third of the pan 🙊. Since it’s impossible for me to follow box directions 😂, I (of course) made some swaps to the recipe on the back on the bag: instead of an egg, I used @bobsredmill
vegan egg replacement, and I only used 1/4 a cup of nut butter (using Julie’s Real addictive Cinnamon vanilla almond butta 😉👌) and 1 mashed banana instead of 3/4 cup of nut butter and coconut oil 🤷🏻♀️. As a result, these blondies came out of the oven a bit soft, but after a few hours in the fridge, they seriously taste like caramel banana fudge, and I am soooo down 👅👅. also released a paleo brownie mix. Which would you try first 👉🏻 brownies or blondies? This was my first time ever trying a blondie and I am officially a biiiiig fan 😍😍.
Green is good! Especially for your little ones. So many kids have digestion issues and have to take vitamins, prescription medications, and laxatives. Try removing some of the more inflammatory foods from their diet (like sugar, dairy, or gluten) and adding in some more greens!

sweet potato swirl bread
-250g bread flour
-4g instant yeast
-25g granulated sugar
-4g sea salt -165g soy milk, lukewarm -25g vegan butter
-for color: 20g purple sweet potato powder @suncorefoods
In a large bowl, combine the flour, yeast, sugar, salt, and milk. Knead until smooth; about 10 minutes by hand, then add in the butter and continue kneading into a smooth dough. Form the dough into a ball and place in a covered bowl to rise for 1-2 hours.
Once doubled in volume, divide the dough into 2 equal parts. To one piece, knead in the sweet potato powder (1 tsp at a time) until the color is evenly distributed. Let the dough rest again for 15 minutes, then roll each piece into a 0.5cm-thick rectangle. Lay the purple dough on top of the plain dough, then roll them together into a tight log. Place into a greased loaf tin to rise for 30 minutes, then bake at 350°F/180°C for 35-40 minutes, until the top is golden brown. Let cool completely before slicing & enjoy!

Chocolate biscoff bars 🍫😍 Who agrees there should be more chocolate bars readily available for vegans 🙋♀️ I don't just mean plain chocolate bars but crunchy, biscuity, caramely bars like twix, crunchie, kitkat etc... In the mean time I'll have to make do with these 💁🏼♀️ they really hit the spot and they're easy to make. Just take some biscoff spread and sandwich between 2 lotus biscuits. Cover in melted chocolate and leave to set in the fridge 😋 I'll be permanently keeping a stack of these in my fridge 😂 What chocolate bar would you like to see veganised? COMMENT BELOW ⬇️⬇️⬇️
Savory and sweet muffins for daytrip:
1) with dried tomatoes
2) with olives
3) with apricot jam.
Finding: while baking muffins in silicon cups is the zero waste way to go, muffin papers are useful to hold these delicious pieces together.
P.S. the ones with dried tomatoes were a bit too salty.

Vegan coconut flapjacks 🥥
I just had this beautiful Lemon & Blueberry cake (my favourite!!!) at @limauvegan
- a 100% vegan cafe just 1 minute walk from Clapham Junction station! This cake was so lovely and moist, great flavouring and lovely hard icing on the top - the only thing that would have improved it in my opinion would have been to double the amount of frosting between the layers. That might just be for me, cause I'm a frosting fiend! 😍😍 Limau have a lovely selection of hot drinks, vegan cakes and pastries as well as hot food and wraps. You'll be spoiled for choice there! Will definitely be returning for more Lemon & Blueberry cake! 🍰

A couple years ago a wild raspberry bush sprung up in our garden and it quickly became my favorite thing in there. This year the bush decided to double in size and is pumping out an insane amount of raspberries.....which means I have more than I know what to do with! So far the best thing I've done with them is add them to my go-to healthy, gluten-free/vegan Dark Chocolate Chip Cookies. Seriously the greatest thing ever. • If you want to try making them too just search my blog for Dark Chocolate Cherry Almond Flour Cookies. And instead of dried cherries - fold in a handful of fresh raspberries....and thank me later!
