I have never seen a place with so many apple trees! People have so many apples they put out baskets of apples for passers by to take hone. I bet we’ve gone through 20kgs already this season....we have made all the apple things. Surprisingly, they still haven’t realized how amazing apple cider donuts are over here, I may just need to introduce them to some 🤷🏼♀️🍩 #yum
the most delicious skillet “huevos rancheros” (I mean sort of, let’s call it my take on it). 😎
skillets are one of my favorite meals to make because they’re easy and the flavors all meld into one beautiful dish 🤩
how I did this one:
1. chop sweet potatoes into cubes, toss in olive oil, paprika, chili powder, salt. roast at 375 for about 15-20 minutes or until lightly cooked.
2. while the sweet potatoes roast, cook up the ground turkey with taco seasoning.
3. add sweet potatoes, diced red onion and red bell pepper to cast iron in olive oil. sauté til slightly translucent.
4. add in black beans, cooked turkey, and a few spoonfuls of your favorite salsa.
5. once cooked down a little, add in some chopped spinach and shredded cheese.
6. make little wells and crack in the eggs. cover, and let cook until desired doneness!
*I ate mine with corn tortilla on the side! and seasoned top with dried cilantro and red pepper flakes.

Lunchin’ it today with leftovers! Butter lettuce, brown rice, grilled chicken, and pineapple-lime slaw topped with a sour cream based dressing (with lots of lime zest and squeezed lemon, salt and granulated garlic) and cilantro!
Does this comfort bowl of goodness look complicated and time-consuming to put together? It actually was ready within 15 minutes. The key? Leftovers. . - last night's roasted veg and quinoa was reheated in a pan (way tastier than microwaving), along with pine nuts
- a handful of kale was quickly chopped and sauteed within a few minutes
- it was all thrown in a bowl together and topped with prepared hummus, sprouted pumpkin seeds, hemp seeds, and scallions (which took just a moment to chop)
- tip for the roasted veg: roast whatever you have on-hand. The batch above is potatoes, peppers, cauliflower, garlic, and romanesco. Break or coarsely chop into relatively equal-sized pieces. We’re not taking long here - not like fine dice chopping. Toss in a bit of avocado oil and roast on baking sheets (sturdier veg with sturdier veg, more delicate on separate sheet) at 450-475 degrees in the oven for about 10 minutes, then check on them. Your cook time will depend on the veg and your oven. Roast until it looks roasty-toasty (browning) and softish when punctured. Usually around 25 minutes total. Easy for two big sheets of wonderful roasted veg!

¡Receta nueva! He preparado estas galletas de avellana (con crema de avellana) y trocitos de chocolate #singluten
🍪 En el blog tenéis la receta completa con todos los detalles (y algunos trucos) y os hablo también de cómo preparar la crema de avellana 😋
•50 g de harina de arroz
•1 cucharadita de bicarbonato
•80 g de azúcar de caña
•100 g de crema de avellana
•Una pizca de sal
•20 g de chocolate negro
•30 g de avellanas tostadas y peladas
Trocea el chocolate negro y las avellanas. En un bol mezcla la harina junto al bicarbonato y reserva.
Con unas varillas manuales o eléctricas bate la crema de avellanas junto al azúcar y la sal hasta que la mezcla sea esponjosa.
Añade el huevo a la mezcla anterior y sigue batiendo hasta integrarlo todo. Ahora incorpora los ingredientes secos que habías reservado y mezcla todo bien con una cuchara. Añade el chocolate y las avellanas.
Precalienta el horno a 180C
Si la masa está demasiado blanda, llévala unos 20 minutos al congelador para que quede más manejable. Ahora haz bolitas de masa y enfríalas un poco (si tienes tiempo, 1h30 en el frigo, si no unos 15 minutos en el congelador).
Coloca las bolitas en la bandeja del horno sobre un papel de horno y hornea a 180C durante 12 minutos. Aunque parezca que siguen crudas, ya están hechas! Déjalas enfriar por completo y a comer! 🍪🍪🍪

You know when you come across a recipe that truly speaks to your heart and you know right then and there you must make it? This happens to you, right!? Well it happens to me allll the time 🤣 I become so smitten with a certain recipe that my life won’t be complete until I make it for myself. Yes, this sounds dramatic but I promise I’m not exaggerating 😉
This was the case with the recipe for Korean eggplant & mushroom tacos with kimchi cream from @dishingouthealth.
It’s been on my list to make for months!! In my defense, I was waiting for my first batch of homemade kimchi to mature 😅 I used eggplants & mushrooms from my farmers market friends and added chickpeas for a protein bump. The kimchi cream is 👌🏼👌🏼 you’ll definitely find me liking that stuff off the spoon. Temporary link in profile if you want to make it too! I just recommend not waiting so long like I did.
Today I enjoyed a Swedish classic dish called Ragmunk 🇸🇪 (see Instagram stories for a picture) and it made me realize that A LOT of Swedish dishes contain some variation of bacon, lingon, batter and/or potato 🤔. Like this kolbulle I made last year on our backyard campfire! Thick chunks of bacon fried over an open fire, then covered with pancake-like batter, and finally served with lingon berries... honestly you can’t go wrong with this one 🙃
As I was preparing our dinner for tonight (Erev Yom Kippur aka the night before Yom Kippur), I recognized how this is a meal I make every year, for this evenings dinner. Maybe it’s routine, maybe it’s tradition, maybe it’s a combo of both. Anyways, it’s a dish full of veggies, lots of chicken, served with some pasta, and cheesy bread. It’s full of sustenance and helps make for an (hopefully) easier fast on Yom Kippur. To everyone; I ask for forgiveness for any wrongdoings I may have caused you in the last year. To those observing; may you have an easy fast. ❤️

while i’m not a huge apple fan, i’ve been dying to try a pink fleshed apple so when i found some at my local @naturalgrocers
i had to get one
they taste just like a regular apple (i know, surprise surprise). this one is a pink pearl and it was softer in texture
