Friend 2: I know... Pasta again 😬 but I promise it's packed with veg/speed.
I did my own take on the sw arabiatta: I fried the slimmers choice fat free turkey and vegetable meatballs (swipe for picture) in @frylighthq
until they started to brown. I then added 1 diced white onion, 1 red onion, 1 red pepper, 1 stick of celery, 1 red chilli deseeded and sliced and mushrooms which I fried off until they had all started to soften. I then added a pinch of mixed herbs, 1 tsp of @verylazyfooduk
garlic, 1 tsp @verylazyfooduk
chilli and chilli flakes. I then added 1 tin of chopped tomatoes and around 250g of pasatta and left it to simmer on a low heat. I served it with rigatoni pasta and a speedy salad.
* Not sure on the syns in the meatballs if anyone could advise? *
