🌮 “Beef” Quesadillas

These quesadillas were so scrumptious, I could eat them for days! 🤤 Plus along with that guac...Spicy, crispy, crunchy, cheesy👌🏼 Happy

▫️2 Cassava Flour Tortillas (

▫️1/2 cup Cauliflower Rice (

▫️1/2 cup Black Beans
▫️1/4 Onion
▫️1 Jalapeño
▫️Sweet Corn
▫️Mexican Shredded Cheese (

▫️1 tbsps Soy Sauce (

▫️Seasonings - cumin, chili powder, smoked paprika, garlic powder, salt & pepper

Guac 🥑
▫️1 Avocado
▫️Fresh Pico de Gallo (

▫️Splash of Fresh Lime Juice
▫️Salt, to taste

Start off by using a food processor to pulse the black beans. Be sure to not purée & just slightly “chop” them. Set aside.
Next, add in the onion & jalapeño. Do the same and roughly chop them. Set aside as well.
Cook the cauliflower rice according to the package instructions.
In a pan, cook the beans, onions, jalapeños, & cauliflower in some avocado oil. Add in all the seasonings plus the soy sauce. Go crazy if you like it spicy 🌶 (which I do). Mix it all together & after 2-3 mins, set aside.
Lay a tortilla in the pan, add in Mexican cheese, then the “beef” filling, then corn, some more cheese, & then finally top with the second tortilla. Cook on both sides until crispy!
For the guac, mash the avocado & mix in all the other ingredients!
Serve the quesadillas with guac on the side & topped with habanero hot sauce (
