No Brasil a introdução da quinoa começou a ocorrer na década de 90. O grão é a parte mais consumida desse alimento e é caracterizado por possuir elevado valor nutricional, com destaque para sua proteína. De acordo com FAO (2009), a quinoa é o único alimento de origem vegetal que apresenta todos os aminoácidos essenciais, oligoelementos e vitaminas. A Nota de PDCAAS da quinoa é super alta (1,07), além de apresentar digestibilidade de 98%. E os benefícios desse alimento não param por aqui, a quinoa também possui um ótimo perfil lipídico, apresentando 82,7% de ácidos graxos insaturados, especialmente o ácido linoleico (Ômega 6) e o ácido oleico (Ômega 9); é boa fonte de ácido fólico, vitamina E, vitamina C, vitaminas do complexo B e carotenos, assim como dos minerais cálcio, ferro, potássio e magnésio. Hey girl hey.... this year is all about taking the necessary action to achieve my goals and showing the world I am capable of achieving them while impacting the world on the way. I want you to know how PUMPED I am right now because I decided to take some negative things that had occurred last year learn from them and I hit the pavement running this year. I gave myself a goal to lose 20 pounds in weeks and I achieved it I lost 23.6 lbs in 6 weeks! I was hesitant to share at first because of course embarrassment of falling off on my nutrition and I still have a ways to go to get to where I want to be this year but I want you to know that I am so happy I made the decision to put my life and health FIRST. I know how it’s hard to sometimes not compare yourself to others and to easily get overwhelmed. However every change starts in your mind first and I want you to know that you are capable of reaching your goals and can get there this year! You may not be where you want to be yet but keep working towards your goals and with persistence you can get there. You may not see your victories as monumental yet but someone is watching and is learning from you. One choice at a time, one moment at a time, one day at a time and you can get there. I’m on a winning path this year and so can you! So happy I decided to reset my body with superfoods and a healthy nutrition plan! Who else has some goals for summer ! I was in the mood for some pancakes today because my class was cancelled and the weather outside called for it 🥞🌧 This is my favorite pancake mix ever because the ingredients are great and the flavor of the mix is not lacking either. Time for some honesty and #realtalk (left: 4 years ago - right : feb2019) 🔺my hair stopped growing and was super thin 🔺my mind was foggy 🔺Finding focus was hard 🔺I hated being in public 🔺I hid my body under layers of clothes or behind other people 🔺could not fit any of my clothes 🔺compliments from other people felt false 🔺i was sad and couldn’t understand why 🔺I blamed the dark cloud over me on everyone else 🔺my skin was blotchy, flaky, and covered in clogged pores or pimples 🔺my stomach basically rejected me .. anything I ate made me feel instantly bloated or irritable 🔺I was constantly tired 🔺and the list really goes on but I think it’s fair to say you get my point................. 🔻NOW🔻🤗😁✌🏽 I’ve done a complete 180!I am shining so FREAKING BRIGHT THESE DAYS🥰🌟my body and mind are so much healthier🌟💕 I owe everything to my glorious #superfoods 🙏🏽🤩and the tools I use in my program...this is a lifestyle that has probably added years to my life and I can be proud of👏🏽💕

✨🔹My Favorite Smoothie🔹✨ #Recipe » I’ve never been a big smoothie person until recently... because I love food SO MUCH my thought has always been “Why would I drink my food when I could eat it and get more enjoyment/flavor?!” » However, turns out I’ve been missing out this whole time because smoothies can taste great, be filling, AND pack a huge nutritional punch. I never wanted to like smoothies because I was worried about how many calories and grams of sugar were in them. But now, after focusing on all the good things in them, I’m able to provide my body with a lot more things it needs every day just in this one drink. And because this smoothie is filled with healthy calories and only natural sources of sugar, I’ve realized I don’t need to worry about that nearly as much as I used to think. » Here is the basic outline of my smoothie recipe which you can modify to fit your taste, as well as the specific ingredients I use: »•3/4 cup base liquid (I use an almond/coconut milk blend) »•2 handfuls leafy greens (I use baby spinach) »•1 tablespoon nut butter (I use almond butter) »•1 soft fruit (I use banana, frozen. You can also use avocado) »•1 handful frozen fruit (my go-to mix is strawberries and blueberries) »•1 scoop protein powder (I use Vital Proteins collagen peptides for bone, joint, and skin health, but you can definitely go with a plant-based protein here) »•1 teaspoon natural sweetener (optional), (I use raw honey) »•1 teaspoon healthy oil (optional), (I use MCT oil which is derived from coconut oil) »•Other Optional Superfoods (I add chia seeds, cinnamon, ginger, turmeric, and sometimes Maca powder. Do a little research to determine which spices, supplements or superfoods you’d like to add to your diet!) » This recipe usually yields about 16-20oz of smoothie, aka about one big cup! I don’t have time to make this every single day, but I try to have one a few days a week to supplement my fruit, vegetable, and superfood intake. » This is great as pre-workout workout fuel (about an hour before workout) or a post-exercise recovery snack (immediately or up to an hour after working out)! » 💜, Coach Colleen

🍍Green Pineapple Smoothie Bowl ⏲Under 10 mins | Serves 1 Smoothie bowl Sunday time! Experimented with a random recipe this time & I gotta say, it’s probably one of my favorites now. It may be Fall for some of you guys out there but it’s currently mid 80s with super sunny skies here in Texas, so aka 90 degrees & humid. So green tropical smoothie it is for breakfast👌🏼 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Bowl Deets🥥 ▫️1 Frozen Banana ▫️1/4 cup Frozen Mangos ▫️1/3 cup Frozen Pineapple ▫️Small handful of Spinach ▫️3/4 cup Coconut Water (@vitacoco ) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Blend everything together & top with frozen pineapple chunks, shredded coconut, & hemp seeds.
🍳 Zucchini & Sweet Potato Hashbrowns ⏲ Under 15 mins | Serves 2 Enjoying this delicious breakfast on this beautiful Saturday morning☀️ Feels good to finally be able to sleep in! My body has been drained since the cruise & finally I got to sleep in & cook some yummy breakfast. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Hash-brown deets👇🏼 ▫️1 medium Zucchini ▫️1/2 medium Sweet Potato ▫️Olive Oil ▫️Seasonings - salt & pepper, chili powder, garlic powder, cumin, smoked paprika ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Start off by grating both the zucchini & sweet potato into a bowl. Add in some salt & let it sit for 15-20 mins to drain out any excess water. Once that’s done, transfer to a towel & wring out any remaining water. In a mixing bowl, add in the hash-browns, olive oil, & seasonings. Heat up a waffle iron (I used my mini waffle iron from @unprocessyourfood ) & transfer the hash-browns to the iron. Cook accordingly or until brown & crispy. Serve with a sunny side up egg, sliced avocado, & cooked spinach. Season with sesame seeds, salt & pepper!
🍠 Sweet Potato & “Beef” Nachos ⏲ 15 min Prep Time | Serves 2 So I had leftover “beef” mixture from my quesadillas so I was super excited to use them in these delicious nachos 🤤 I actually liked these more than my previous nachos recipe so I will definitely be making this again! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Sweet Potato Nachos👇🏼 ▫️1 1/2 Medium Sweet Potatoes ▫️”Beef” Mixture ▫️Mexican Shredded Cheese ▫️Olive Oil ▫️Seasonings - salt & pepper, chili powder, garlic powder ▫️1 Avocado, cubed ▫️Fresh Lime ▫️1 Jalapeño, sliced ▫️Green Onion, sliced ⠀⠀⠀⠀⠀⠀⠀⠀⠀ “Beef” Mixture👇🏼 ▫️1/2 cup Cauliflower Rice (@greengiant ) ▫️1/2 cup Black Beans ▫️1/4 Onion ▫️1 Jalapeño ▫️1 tbsps Soy Sauce ▫️Seasonings - cumin, chili powder, smoked paprika, garlic, salt & pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Sweet Potato Nachos - Rinse the sweet potatoes & then slice using a mandolin slicer. Toss the slices in a mixing bowl & drizzle in some olive oil as well as the seasonings. Mix everything evenly. Then on a baking dish, lay out the slices. Bake at 400° for roughly 30 mins, flipping halfway. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ “Beef” Mixture - Start off by using a food processor to pulse the black beans. Be sure to not purée & just slightly “chop” them. Set aside. Next, add in the onion & jalapeño. Do the same and roughly chop them. Set aside as well. Cook the cauliflower rice according to the package instructions. In a pan, cook the beans, onions, jalapeños, & cauliflower in some avocado oil. Add in all the seasonings plus the soy sauce. Go crazy if you like it spicy 🌶 (which I do). Mix it all together & after 2-3 mins, set aside. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Once the slices are nice & crispy, top with the beef mixture & shredded cheese. Bake at 350° for roughly 10 mins or until cheese is melted. 🌮 “Beef” Quesadillas ⏲ Under 15 mins | Serves 3-4 These quesadillas were so scrumptious, I could eat them for days! 🤤 Plus along with that guac...Spicy, crispy, crunchy, cheesy👌🏼 Happy #HumpDay everyone! You’ve made it halfway through the week & the weekend is sooo close... p.s. peep at the new bowl I bought in Honduras 👀 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ All the Cheesy Deets👇🏼 ▫️2 Cassava Flour Tortillas (@sietefoods ) ▫️1/2 cup Cauliflower Rice (@greengiant ) ▫️1/2 cup Black Beans ▫️1/4 Onion ▫️1 Jalapeño ▫️Sweet Corn ▫️Mexican Shredded Cheese (@kraft.naturalcheese ) ▫️1 tbsps Soy Sauce (@kikkomanusa ) ▫️Seasonings - cumin, chili powder, smoked paprika, garlic powder, salt & pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Guac 🥑 ▫️1 Avocado ▫️Fresh Pico de Gallo (@heb ) ▫️Splash of Fresh Lime Juice ▫️Salt, to taste ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Start off by using a food processor to pulse the black beans. Be sure to not purée & just slightly “chop” them. Set aside. Next, add in the onion & jalapeño. Do the same and roughly chop them. Set aside as well. Cook the cauliflower rice according to the package instructions. In a pan, cook the beans, onions, jalapeños, & cauliflower in some avocado oil. Add in all the seasonings plus the soy sauce. 🍯 Loaded Maple Brown Oatmeal ⏲ Under 5 mins | Serves 1 It’s been over a week since I’ve had oatmeal & boy have I missed it! But I have definitely missed almond butter more...can you believe they didn’t have any on the cruise!? How dare they 😜 So I put a big dollop of it in my oatmeal this morning 🤤 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ What’s in my bowl 🥣👇🏼 ▫️1/2 cup quick oats (@heb ) ▫️1 cup unsweetened almond milk (@lovemysilk ) ▫️1 tsp light brown sugar ▫️1/2 tbsp maple syrup ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Combine all ingredients together in a microwave safe dish. Microwave for 1 1/2 mins - 2 mins. Top with banana slices, raspberries, sliced almonds, cacao nibs, & almond butter👌🏼
🍝 Sweet Potato Lasagna ⏲ 20 min Prep Time | Serves 3-4 Had some extra slices of sweet potato left over from some toasts I made so I thought “why not make some lasagna??” Safe to say, it turned out perfectly! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Lasagna Deets: ▫️1 medium Sweet Potato ▫️Pasta Sauce (I used roasted garlic from @365bywholefoods ) ▫️Mozzarella Cheese ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Tofu Filling: ▫️1/4 Onion ▫️2 handfuls of Baby Spinach ▫️3/4 of 14 oz Firm Tofu ▫️1 tbsp Lemon Juice ▫️1 1/2 tbsp Olive Oil ▫️Salt & Pepper ▫️Italian Seasoning ▫️Parmesan Cheese ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Preheat oven to 425*. Start off by using a mandolin slicer to carefully slice your sweet potato. Drain any excess water from the tofu by wrapping it in some paper towels & letting it sit between two plates for 10 mins. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Tofu Filling: In a food processor, pulse together onion & spinach. Only pulse it a few times to leave it choppy. Don’t purée it!! Set aside. In the same food processor, add in the remaining ingredients. Pulse until it is nice & creamy. Then add in the chopped onion & spinach back in, mixing it in with a spoon. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Time to layer the lasagna! In a small glass dish (4”x8”), start off with a layer of pasta sauce. Add in the slices of sweet potato. Then add in the tofu filling & a layer of mozzarella cheese, followed by another layer of sweet potato (this time laid in a different direction) & pasta sauce. Keep going until you’re out of everything! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Cover with some foil & bake for 25 mins. Uncover & bake for another 15 mins 😋 {Recipe video tutorial in story highlights}

🌮 Sweet Potato Breakfast Tacos ⏲ Under 15 mins | Serves 1 Happy #TacoTuesday ✨ These breakfast tacos are one of the best I’ve had in a while! The oozy yolk is just 🤤👌🏼 Also finally tried some @sietefoods cassava tacos & they were delish! But tbh, I love their branding so much more 😂 #graphicdesigner . ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Deets👇🏼 ▫️2 Cassava Flour Tortillas (@sietefood ) ▫️2 Sunny Side Up Eggs ▫️1/4 Sweet Potato ▫️Avocado ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Use sweet potatoes that have been boiled already for roughly 15 mins. Cut them in cubes & sauté in olive oil. Season with chili powder, smoked paprika, cumin, salt & pepper. I warmed up the tacos on a pan for a few minutes & then topped with a sunny side up eggs, the sweet potatoes, sliced avocado, sesame seeds, fresh cilantro, salt & pepper.
