Let me elucidate the role of colours and how it should determine grocery shopping. 🍅vs 💚 TOMATO
While Red Tomatoes are a tad bit healthier because of a concentration of lycopene, the antioxidant red pigment. .
However, if you are looking at having a major dose of Vitamin C, then pick the Green tomato. It has the highest amount of Vit C among its coloured cousins. .
💜vs ⬜ CABBAGE
The choice between red (ok purple) cabbage and white is relatively simple. Pick the red version! More vitamin C, antioxidant anthocyanin and 1 1/2 times more heart healthy potassium in the 💜 cabbage!
🌶️💛vs 💚 CAPSICUM (Peppers)
Among the peppers, every colour has its benefits. .
Red and yellow capsicum gives you better beta-carotene (vitamin A precursor), folate(no anaemia) and vitamin C(helllo immunity). .
On the other hand, the Green💚 Capsicum has lutein, zeaxanthin (antioxidants) and also vitamin A. .

First attempt at cheesy shrimp pasta AKA quasi shrimp Alfredo in the instant pot wasn’t a complete fail. I had to finish it on the stove due to some technical difficulties and yet it turned out really good. By the way that Alfredo sauce is homemade whipped up in about 10 minutes. Real food is better for you and doesn’t take as long as you think. The most time consuming part of cooking is doing the dishes, am I right??? Yes it’s 9:30 pm (actual time of completion and eating) because I’ve had a busy afternoon. If you’ve seen my live story earlier this evening you know why.

While I enjoyed some more eggs & cheese... the kids got to enjoy Chicken Pot Pie!! Truly one of our faves. And easily changeable... the veggies or even the top but as it’s prepared here... there’s only 3 net carbs including the carbquik crust per serving (8 evenly cut pieces out of a 13x9 casserole)!
4 cups cooked chicken
Roughly 2 cups bone broth
2 tsp xantham gum for thickening
Bag frozen broccoli florets
1/2 cup sliced carrots
2 cups carbquik
And enough water to make dough spreadable (I don’t measure)
Sat & pepper to taste
The How To
-> cook the chicken ahead... I typically cook a roaster the day ahead, set aside enough chicken for this dish, kids eat the rest on a wrap 😉 and I slow cook the carcass for just enough bone broth! 👌🏻 -> In a sauce pot, add the broth, chicken, carrots, & broccoli and heat through -> add salt, pepper -> scoop out about 1/2 cup of hot broth, and stir in xantham gum until well mixed... now add into the sauce pot and mix in -> dump the filling into a 13x9 -> in a clean bowl, mix the carbquik with enough water to make it the consistency of waffle batter -> spread over the top of the filling -> bake at 350 for 30 minutes (or more) depending on thickness of your biscuit top 😉 -> enjoy ———————————————————

Have you tried using tempeh yet? If not, this chunky + veg filled tomato sauce is the perfect easy recipe to try it out! Here’s how you can make this for your next quick weeknight dinner 👇🏽
TEMPEH SPAGHETTI SAUCE
¼ Cup Olive Oil
1 Cup Diced onions (~1 medium size)
1 Pack Tempeh, crumbled (8oz)
2 Cups Diced green pepper (~ 2 medium size)
8 Oz Diced mushrooms (~ 2 Cups)
2 Cans Diced tomatoes
½ Tomato paste (6 oz)
½ Cup Red wine
2 Tsp Oregano leaves
1 Tsp Salt
1. Sauté onions in olive oil, on medium low, until onions are clear (2-3 min.)
2. Add tempeh and saute until all tempeh is browned (5-6 min.)
3. Add mushrooms and green pepper and saute until mushrooms are no longer “pink” (3-5 min.)
4. Add tomatoes, tomato paste, wine, oregano and salt. Bring to a low boil then simmer uncovered on low for 20 minutes. Stir occasionally.
5. Serve with your noodle of choice and top with red pepper flakes for some added zing!
So far this fast is pretty easy. I personally like it better than beef & butter but that’s mainly because red meat is not my favorite.

I’ve been following the “guidelines” but modified them a little bit... —————————————————————————-YES!! ✅
Eggs and cheese are the only source of protein allowed —————————————————————————-
1 tbsp butter or other healthy fat per egg (butter, oil, bacon grease, mayo are all great). —————————————————————————-
1 oz of cheese per egg consumed.
If I eat a couple HB eggs, I’ll have a slice of cheese on the side. I’d prefer not to have the cheese but I know the fat is important. —————————————————————————-
Must eat at least 1 egg within 30 minutes of waking up... my breakfast is a fat coffee. —————————————————————————-
Eat every 3 to 5 hours.
But NOT easy for me... I don’t like “forcing” myself to eat just because the clock says... isn’t not eating when you’re hungry the point of ketosis? —————————————————————————-
Must eat at least 6 eggs per day. —————————————————————————-
Stop eating 3 hours before bedtime.; as a personal goal, I ALWAYS stop eating at 8pm since starting keto. —————————————————————————-
Up to 3 cans of diet soda per day.
WHY would you consume this much soda daily even if not fasting!?! Why not fast from “fake sugar” these couple days too?!? —————————————————————————-

Guacamole is one of my favorite snacks and a favorite of my family and friends! Feeling a little overwhelmed today with some female issues, an interview on Friday, and just feeling behind in general BUT I’m trying to stay positive ☺️ Going to get in a late workout later 💪🏼, attempt to make #lowfodmap
pasta sauce 🍅, and get some interview prep done 📚 Happy Tuesday 🤗🤗 .
-Squirt of lime juice
-1/6 finely diced red onion
-1/4 diced tomato
-1/2 tbls garlic powder
-Dash of salt
Combine all ingredients besides tomato in a bowl until desired consistency is reached. Add tomato and stir to combine. Enjoy!
