Two of the guys at work recently put in their two weeks notice, and the kitchen won't be the same. Tonight, myself and one of the aforementioned, Matt, teamed up on a Soup Du Jour. I came up with the concept, he did the heavy lifting- including making fresh veg stock- I finished it with sugar and lime juice, and we collaborated on the garnishes. We did all of this while juggling the line. I can honestly say that it was the most fun I've had at work in a while.
Southwest roasted pepper soup, made with red bell, poblano, and jalapeño. Garnished with smoked nut crema, crispy tortilla strips, fried jalapeño rings, micro cilantro, and a lime wedge. Had to distill everything I've learned from @chefphilt
in order to plate this thing just right. And, yes, it is vegan.
