Silken Tofu and Chicken in Salted Black Bean Sauce
🏃🏻♀️ What a quick and easy dinner to make. “Wow, it’s a delicious dinner”! So nice to hear from the real tasters—>my own family. 😋 .
My work meeting ran until 7pm, and my commute took 30 minutes. This dish only takes me 15 minutes to cook.
As I have already set the timer on my rice cooker for the bean rice this morning, it is all really to serve by 8pm.
300g silken tofu
2 chicken breast fillets, cut into small cubes
1 Tbsp salted black bean
2 cm cube ginger, thinly sliced
3 cloves garlic, minced
1/4 purple onion, finely sliced
3 Tbsp cooking oil
1 Tbsp sesame oil
1/2 tsp salt
1/2 tsp white pepper
1/2 cup chicken stock (homemade)
1 fresh chilli 🌶, seeded, finely sliced
1 sprig coriander/cilantro, finely chopped .
1. Sauté ginger and garlic in oil until fragrant and lightly brown.
2. Add chicken cubes, salt and white pepper. Cook for 5 minutes.
3. Add salted black bean, onion, chilli and chicken stock.
4. Once sauce is boiling, turn off the heat.
5. Microwave the silken tofu for 1 minute.
6. Serve warm silken tofu, chicken with black bean sauce, coriander and sesame oil.

Add to a olive oil in hot pot:
🐙 2 garlic cloves
🐙 2 fresh chillis - sliced
🐙 one onion - diced
Fry and soften
Add a splash of white wine.
Add a can of diced herbed tomato’s.
Bring to the boil.
🐙add 1/2 kilo of fresh mussels
Stir and put the lid on until they all crack open and are bright orange inside!
Serve with fresh crispy bread 🙌

Chickpea and mushroom curry
1 clove garlic, minced
1/2 onion, chopped
1/2 green bell pepper, chopped
150g mushrooms, chopped
1 tsp garam masala
1 tbsp tomato paste
1/2 can coconut milk
1 tsp turmeric
2 tsp curry powder or vegan curry paste
1 tbsp tamari
1/2 can chickpeas
1 tsp cornflour
Rice, to serve
Add the garlic and the onion to a non-stick frying pan and cook for 1-2 minutes, until softened. Then, add the mushrooms and the onions, sautéing for a further 2-3 minutes until the mushrooms begin to cook down. Then, add the garam masala and tomato sauce, stirring to coat the vegetables before pouring in the coconut milk together with the turmeric, curry powder/curry paste, tamari and chickpeas. Simmer on a low-medium heat, stirring frequently, for 4-5 minutes. Then, add the cornflour and stir for 1-2 minutes more to allow the sauce to thicken. Serve immediately with rice of choice.

Here’s a little Sunday night motivation to launch your week on a positive note!
I LOVE spending my Sunday nights prepping meals while listening to music/podcasts. It relieves stress and a ton of worry!
I thought it would nice to share with you all some of my tips.
Tip 1. I opted to bake everything. I lined the pan with parchment paper, chopped everything up, oil, seasoning, and popped into oven. Boom. Easy peasy lemon squeezy. (🤣🤣🤣) I love doing it this way because it’s easy clean up and while it’s cooking I can get another task done like cleaning the kitchen, etc. BUT do Whatever you choose to do with this extra time!
Tip 2. I like to pick very simple meals. Protein, veggie, and carb. That’s it.
Tip 3. Pick what’s on sale at the moment.
For an example, Zucchini was on sale. So I knew that would be one of my veggie options.
Tip 4. Shop at Aldi!! This will save you a TON!
The total for a days worth of meals was around $8.23. That’s around $2.74 a MEAL!
A healthy meal at that! Isn’t that Insane?! Swipe right to see the break down and my calculations. (Who said you don’t need math as an adult?! Or maybe I’m just a math nerd 🤓) *these are not %100 exact estimates, but I did do the best I could. Obviously, this is for the portions I eat and pricing will differ based on your calories intake, etc. also this is based off of the Aldi in my area, prices may be different in your area. Doesn’t include snacks and may have a small breakfast or protein shake. Also, I got hungry and ate some of the asparagus, one chicken, one shrimp lol. A girl was hungry. Don’t judge. Week two of gluten free, sugar free, and (mostly) dairy free!
This week we spent $81.47 on groceries. More than last week and a bit more than normal, but I’m thinking a lot of what I bought will last a few weeks.
I was SHOCKED at how much produce we went through last week, so I bought even more this week. And because I kept feeling hungry, I added in guacamole and avocado because the internet told me it would help😂
I still think our least expensive strategy is to stick with simple foods: fruits, veggies, meat, eggs…🍎🥦🍗🍳 The prices for gluten free processed foods like bread, protein bars, pancake mix, etc are insane!
Meal planning is definitely helping sooo much so that we don’t waste any food and have specific meals we can make instead of random produce that doesn’t really equal a meal.🌟

CONFESSION: We’re eating this way for Austin to see if he has any food sensitivity causing his mystery medical symptoms, and I am totally cheating whenever I get the chance! When I bought groceries, I made an extra stop to get myself a donut🍩 and ate it in the car! #winning

Mash avocados with a fork. The rest of the ingredients are to taste, depending on how many avocados you use.
Having mine today with some roasted planting chips👌🏼
Tip -> if you’re not going to eat all the guacamole right away, store the pit from the avocado in your guacamole and it will keep your guac green, even overnight.

It’s Sunday! What does your meal prep look like this week?
I do much more ingredient prep than full meal prep. This gives me less time in the kitchen on the weekend and allows me flexibility during the week if I want a different flavor combo than originally planned. Here’s what’s in my kitchen: *chopped mango (ready for snacks or breakfast or smoothies)
*chopped veggies (ready for chili, roasting or even a quick scramble if need be)
*bean-sweet potato burgers (likely to be my lunch protein on a salad all week but could be a fast dinner too)
*no sugar seedy granola (snack, breakfast with chia pudding, or on defrosted berries and coconut flakes for dessert)
*bone broth (for a chili tomorrow and for freezing)
*parsley pesto (for making pretty much any meal tastier)

This recipe is for anyone who claims they don’t have time for breakfast on their busy week day mornings! It takes 25-30 minutes to make these delicious and healthy egg cups. Portion them out ahead of time for easy grab-and-go breakfasts.
•spinach •sun-dried tomato •feta •eggs •milk •garlic powder •salt and pepper
Pre-heat oven to 350 degrees. Spray a muffin tin with non-stock cooking spray. Place a little bit of chopped spinach, sun-dried tomato, and 1 tsp of feta in each cup. In a separate bowl whisk together 1 dozen eggs and 1 cup of milk with garlic powder, salt, and pepper. Pour into muffin cups. Bake for 25 minutes or until eggs are no longer liquid.

Les ingrédients :
- 2 ou 3 cuisses de poulet coupées en deux
- 1 grosse patate douce
- 10 pomme de terre
- 1 oignon rouge
- 2 échalotes - Huile d’olive
- 1 Branche de romarin+ quelques feuilles de sauge - 2 Cc d’Ail en Poudre
- 2 Cc de Thym
- 1 Cc de Vandouvan by Roellinger 🔹Laver les patates douce et les couper en gros dés. 🔹Laver les 🥔 et les éplucher. Puis les couper en morceaux .
🔹Éplucher l’oignon et le couper en 4 ainsi que les échalotes.
🔹Déposer le tout dans un plat allant au four.
🔹Soulever la peau du poulet et y glisser les herbes de votre choix. J’ai mis une feuille de sauge et de romarin sous la peau de chaque morceaux.
🔹Les déposer dans le plat.
🔹Badigeonner avec l’huile d’olive.
🔹Assaisonner avec l’ail en poudre + Sel/Poivre + Vandouvan + Thym.
🔹Enfourner pendant 45 min à 210*.
🔹Pour une peau plus crispy, finissez la cuisson en mode grill pendant quelques minutes.

Vegan Chocolatey & banana pancake stack🥥🍫🌱
Weekend breakfast treats or just craving something sweet! Healthy & delicious and nutritious... so simple and quick!
Ingredients ( makes 10-12 dependent on size)
- Raw oats 3/4 cup
- 1Medium banana
- Oat milk
- 2 tablespoons cocoa powder
- 1 half teaspoon of baking powder
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/8 teaspoon salt
Dark chocolate (I used 70% percent @greenandblacks
choc short liquid is great!)
Berries, strawberries/raspberries/cranberries ( fresh or frozen, if frozen defrost in microwave for a few seconds before serving)
Blend all ingredients in a blender ( I used a nutribullet but any blender will work) until smooth, let sit for five minutes.
Heat a tablespoon of coconut oil in a pan, spoon the mixture into the pancake size you like and lightly fry on medium heat for 2-3 minutes, until bubbles form then flip and cook the other side.
Add more coconut oil if pancakes start to stick. Serve up with 70% dark melted chocolate (or @sweetfreedomuk
) between each pancake and drizzle over the top, add your choice of berries & sprinkle the desiccated coconut.
