🐟 Fish Baked with Lime & Tomato Parcel 🐟 . . 🙄Another friday, so looking forward for the “fish night”. 👀 This simple, full of flavour, tender ocean trout only took 20 minutes to bake. Also 👅👍.... . . Ingredients: 1 ocean trout fillet 1 purple onion, thinly sliced handful of cherry tomatoes, halved 1 tsp of fresh thyme 1/2 lime juice himalayan salt black pepper 2 Tbsp extra virgin olive oil . . Method: 1. Preheat oven to 190C. 2. Sauté 1/2 onion in 1 tablespoon oil, until lightly brown. 3. Scoop into baking paper. 4. Put the fish fillet on top. 5. Line tomatoes, lime slices on top. 6. Add l tablespoon of extra virgin olive olive oil. 7. Wrap the parcel up. 8. Bake for 20 minutes. 9. Slow cooked beef, onions sautéed in duck fat and balsamic vinegar, and olives. Another quick and easy meal. _ For the beef, I rubbed on Italian seasoning with salt and pepper. I placed it in my slow cooker with a little bit of water lining the bottom, set on low for 10+ hours. It’s awesome to come home to dinner already half cooked. _ Sautéed onions go so well with any kind of meat. Double the satisfaction frying them up in some delicious duck fat. With the temperature requiring Ugg boots inside and snow falling in LA, there’s no way my original meal plan for a shredded chicken taco salad was going to fly. We needed soup STAT! Nutrient dense, healthy food feels super important to my healing. I’m not always up to cooking, but @hashjag gave me a simple hint of cooking eggs in the microwave! It didn’t sound very appetizing to me and I’m usually kinda anti-microwave, but lately it’s been very difficult for me to cook for myself post-shots and better to worry too much about that. Times like this convenience wins sometimes. I made this meal for myself in about 5 minutes. As it turned out, I also felt very satisfied with my skills as a microwave chef! This meal was delicious comfort food, presentable, and felt hearty and nutritious in rich, brunchy way. Sort of like my microwave’s take on migas meets French toast meets cake? 🤷🏻‍♀️ (I was also very hungry, I took a bite before I took a picture 🤣) . -3 eggs . -2 corn tortillas, ripped up . -lots of cinnamon, lots of nutmeg (lots of antioxidants!) . Cooking wings in the air fryer can be so delicious, you will never miss oil fried chicken wings again! The trick is to start at a lower temperature such as 375 degrees F for 25 minutes and making sure to flip halfway through. The lower temperature allows the fat under the skin to gradually break apart. After the fat is broken apart, increase temp to 400 degrees F and cook for another 6-8 minutes to add that delicious crispy skin. That’s the other thing I love about this meal: you can customize it! 💙 Ready to dig in? 😘 Black Bean & Corn Salad * 2 cups whole kernel corn (I used frozen, thawed) * 2 cups cooked black beans * 1 small red onion, finely chopped * 1 red bell pepper, chopped * 1/4 cup fresh cilantro, chopped * 1 small garlic clove, finely minced * 1 tablespoon apple cider vinegar * 1 tablespoon red wine vinegar * 1 tablespoon fresh lime juice * 3 tablespoons olive oil * 1/2 teaspoon salt * 1/4 teaspoon ground cumin * Fresh ground pepper to taste In a large bowl, combine the corn, Black beans, peppers, cilantro and garlic. In a separate, smaller bowl, add the red onion with the vinegars and lime juice. Let that sit for a few minutes to tame the bite of the onion. Add the olive oil, salt, cumin and pepper to the bowl with onions and whisk together. Pour the dressing over the black bean mixture and toss to coat. Friday Morning _ _ . 7:00am - alarm goes off, brain that ended up awake for 45 hrs prior to this sleep (#insomniaproblems ) hits that snooze button so fast! _ . 7:15ish - hello alarm (again). Realise I got a full 7 hours sleep (so rare) but pulling myself out of bed, my head feels like it’s been clubbed 😅 I stumble over to M and ask the usual ‘how long do I have to cook?’ I’m told 20 mins (workable!) _ . 7:17am - cloudy headed kitchen inventory check _ . 7:18am - I manage to source frozen veg. As we haven’t been food shopping, this meal is going to have to use frozen! Tofu we always have and with noodles needing to be used, lunch is pretty straight forward. Plus it takes my microwave rice cooker 15 mins to cook rice so that’s not an option! _ . 7:25ish - frozen veg, shallots, sesame oil and soy sauce thrown in the wok with ginger & garlic. I used the minced in a jar version of both the garlic & ginger which I highly recommend having on hand for last min cooks! _ . 7:29am - cutting it fine and I’m hoping the chopped tofu that I have added will soak up some flavour in between now and midday when it’s eaten! _ . 7:32am - noodles added, chilli flakes & sesame seeds 👍🏻 _ .
