I had for my breakfast today was a bagel with spinach, mozzarella, spring with a drop of chilli sauce and chives, my snacks have been today a couple of spoons full of peanut butter, (we all do it) some little cakes by Fitbakes, I’ve had a carbkilla, and I’ve had this meal prep which was seasoned salmon fillet with pesto, sweet potato, and broccoli, and if you seen my story, you will of seen my tea, and I’ve just had some of Ava’s birthday cake, and now awaits my hot chocolate. That my friends is a good days worth of food! Saute onions in olive oil until tender, add mushrooms, season with salt, pepper and garlic powder. Cook sausage as you like. Combine mushrooms, sausage, onions and pasta and add handful of spinach. Cover to let spinach wilt. I am soo obsessed with this sourdough. I’ve been toasting it and topping it with raw butter, manuka honey and cinnamon for a sweet treat and it’s beyond perfection. The hubs likes his as a grilled cheese which is no surprise. So glad to have bread we love made with ingredients we love, organic, GF, vegan and sprouted! I clearly made the right decision when I bought two loaves!!
Holy Yumm! This was a good meal last night! 😍😋 . . Aloha Chicken & Rice and some Sweet Potatoes peeking in behind ☺ . This recipe was super easy to make! Serving 5 to 6: . Ingredients: 1. 1 lb boneless, skinless chicken breasts 2. 2 tsp minced garlic 3. 1 cup onion, chopped 4. 1 20 ounce can of pineapple tidbits or crushed and its juice 5. 1 red bell pepper (I used half of a red one and half of an orange one) 6. 1 cup chicken broth 7. 1 cup white rice 8. 1/2 brown sugar 9. 1 cup of lite (low sodium) soy sauce That's it!!! . How: Preheat the oven to 425. Spray a baking dish. Preferably 9 by 13. But I used this one and the juices leaked out just a little. In a medium sized bowl whisk together the brown sugar, soy sauce, garlic and chicken broth. Then add to the bowl the pepper and onion, mix well. Mix in the UNCOOKED rice, and pineapple with its juice. Next cut up the chicken breasts (raw) into small bite sized pieces and add to the bowl. Mix everything well and add to the baking dish. Smooth out everything well, and cover tightly with foil. Bake for 1 hour. Sprinkle with green onions or chives before serving. . Note, if you used the same size dish as the second picture (8 by 8 or 9 by 9) the juices may leak out a little so put a tray under your dish to catch the mess. . Healthy pancakes are such a great start to the day and they really do keep hunger locked up until lunch! Nourish Bowl (all the amazing veggies we have in our fridge) with a Glow Sauce 😍 Sautéed the veggies, put on a bed of greens and rice, and added pepitas, cherry tomatoes, and Glow Sauce... it’s one of our staple dishes!
Quick and easy pork stir fry. Marinated overnight pieces of pork in a honey soy sauce marinade seasoned with white pepper and toasted sesame seed oil. Chopped up a couple zucchini, half a small kabocha squash, and a handful of wood ear mushroom. As the pan heated up on high heat with some grapeseed oil, I tossed the pork with some cornstarch to keep it tender and add some thickening to the sauce. Cooked the pork first and removed it from the pan. Then wipe pan clean and cook the kabocha, letting it brown a little before adding water and cover with a lid to let it finish cooking. Then remove the cooked kabocha and cook the zucchini in soy sauce. Then add the other cooked ingredients and the wood ear and toss everything together in the pan. Let the flavors combine and cook for another couple minutes. Remove from heat, toss with some scallions and cilantro, and your done! Serve over cooked brown rice for a tasty meal! Did you know that Stracciatella is not just the name of chocolate chip ice cream, but it’s a soup too!? Not only that, it’s delicious and crazy fast to whip up on busy nights! Stracciatella is basically the Italian version of egg drop soup. Here’s how to make it: 1. Sauté garlic and onion in olive oil, then add favorite broth and miso paste to simmer. 2. Add tons of spinach and continue to let simmer until the leaves get wilty. 3. Slowly add egg whites to center of soup, turn off heat and let sit for a few minutes before stirring cooked egg whites throughout the soup. 3. Add whisked egg yolk and little bit of Parmesan cheese and stir until creamy. Made a quick batch of these this morning to take to Pennsylvania this weekend. We are heading up for our annual “Miller” Christmas get together. - It’s just my Dad’s siblings and their families but if we were all to come (and that never happens) there would be about 90 people (you read that correctly). My dad is one of 8 and one of his siblings had 8 kids so you can see how we quickly became an army. 😂 - I absolutely love going up to visit everyone each year! This Fajita Pasta is the perfect busy weeknight meal. I love that it’s one of those meals where you just toss in the ingredients with little prep work needed. My tip today is KEEP IT SIMPLE! This advice helped me so much when it came to wrapping my mind around eating healthy. I think for so long, I didn’t eat very healthy because it was overwhelming to me. I thought I had to make these complicated meals with a bunch of organic ingredients I had never heard of and had no idea where to buy. (I mean, in my mind, it was so much easier to just make a cream of something casserole and top it with a bag of shredded cheese. #southern 😄) So, I encourage my clients to keep it simple, especially as they’re just starting out! • Figure out a few go-to, easy meals and snacks, and don’t make things harder than they have to be! For example, one of my favorite meals includes two (TWO!!) ingredients! I throw some chicken tenderloins and a jar of salsa verde into a Crock Pot, and 4 or 5 hours later, it’s done! And a few simple snacks I love are little packs of raw almonds, RX Bars, and turkey slices rolled up with hummus and avocado (and sometimes I’ll throw in some pre-cooked bacon from @traderjoes ). • So, if the idea of changing the way you eat overwhelms you, keep things basic and easy. Eating healthy does not have to be complicated.
