Wild Shitake mushroom risotto with shallots, chives, and parmesan cheese, with a spicy carrot puree with roasted yellow bell peppers, jalapeños, and fried basil chips. Fried chicken soaked in sourcream and heavy cream and double breaded with a laced 🥃 candied pecan roll.
Today was my last day in culinary school, its bittersweet lol BUT glad to see the finish line for the SECOND time! We had a mystery box challenge and this is the final plate I put up that literally got 100% from my chef instructor. I went all in with some of my favorites Italian meets Mexican Southern 👌🏽🔥

Vegan miso with kimchi.
You have my kimchi recipes, just add some toppings (green onion and toasted sesame seeds here). Use the marinated mushrooms i gave the recipe for. Fry them lightly in a bit of oil, set aside.
Skin a thumb sized knob of ginger, put it in the blender with a little oil, about the same amount by weight of green onion whites, with the fibrous bits pulled off.
Cut the tips off three medium carrots, skin them if you want. Save the offcuts from the onions and carrot and ginger skins in a bowl to the side.
Fry the carrots over medium heat until they start to soften and the outside is golden and turning brown. Take them off heat, cut them in half lengthwise. Take half and put it in the blender with the ginger and onion.
Turn the heat up and fry about 3/4 cup of corn until it starts to brown, put in the bowl you intend to eat out of. Boil water in your dirty pan, about a cup and a half, and add the leftovers from the veg to make a stock, and some seaweed (wakame, nori or kelp) for a hondashi flavor without fish guts.
Add about 3tbsp red miso (adjust for your taste) and blend well, add a little broth to loosen it up. Strain the veg out of the broth, stir in your blended miso paste to taste, pour over the corn.
Add your fried mushrooms and carrots, garnish with nori(sushi seaweed) green onion, and toasted sesame seeds. Eat the kimchi as a palate cleanser.
