When did the simple and necessary act of eating become so daunting? ❤️ My grandmother never fretted about food (unless there was a lack of it). She bought vegetables, fruit, eggs, herbs, spices, grains, legumes and some meat. She made bread. She cooked meals. She kept herself and her family nourished and healthy. Dieting was rare. ⬇️ My mom cooked the majority of our meals the same way. But we had a pantry with cereal, boxed foods,sodas and Wonder Bread. On occasion we would be “treated” to pizza, fast food or T.V. Dinners (to help out a babysitter). She worried about what was healthy and what was not. Dieting was commonplace as more and more people became overweight. It was still rare for kids to be overweight. ⬇️ Today, few of us cook. The majority of our meals are now packaged, taken out, driven thru, microwaved, delivered and on the go. Scratch cooking and family meals are now a “treat”. Diets are so prevalent they’ve become lifestyles. We obsess about food: fearful of certain real foods but constantly on the look out for the next “healthy product” or miracle ingredient. Our health and weight crisis is epidemic. The rate of obesity among children is frightening. 🚫 Ironically when we were connected to our food (growing it or buying fresh, perishable foods and preparing it), we spent less time engaged with it. Now we spend soooo much time not shopping and cooking, we race around to buy meals and heat up 12 to keep everyone happy. We spend hours researching the latest trend; measuring/cycling/tracking/counting/timing. The more we obsess about food; the more out of balance our eating becomes and the greater health imbalances we create. 😝 What if the solution is as simple as returning to a connected, balanced relationship with food? Bawang merah, bawang puteh, sedikit halia dan ikan bilis ditumbuk. Rebus dengan air. . Bila kuah dah mendidih masukkan santan. Perlahankan api. I tambahkan fish soya cake. Bila santan dah mengelegak, masukkan sayur. Terpulang nak guna sayur apa. Tambahkan sedikit serbuk lada hitam. . . Sambal Kicap. Campuran kicap manis dan sedikit kicap masin. 🍒Pain maïs or Haitian cornbread 🍒 🍒 🍒 Actually, this recipe Is being included in the book in honor of all the vendors I chased down the street of Rochasse with one side of my hair braided, barrettes and ribbons in one hand and the other side loose in the air 😩😩😩 Good times! I used to love “Pen Mayi” (Creole) or “Pain Maïs” (French). The vendor usually carry a big tray covered with green banana leaves on their head and they would slice the piece we liked depending on the amount of pennies my little sister and I had. What I liked the most was the crust and the granulated sugar on top 😀😀 So delicious! 🍒 🍒 🍒Try this version of cornbread and give it all sorts of fancy tropical names🍒🍒 😀 🍒 🍒 🍒🍒Ingredients 2 cups of cornmeal 1 cup of all purpose flour 3 eggs 2 bananas or 250 grams 1 cup of freshly grated coconut 18 ounces of evaporated milk or milk of your choice 1 1/2 cups of granulated sugar 1 tablespoon of cinnamon powder 1 tablespoon of freshly grated ginger 2 Tablespoons Of vanilla extract 1 tablespoon of rum 1 teaspoon of baking soda 1 tablespoon of baking powder 1 pound of butter 1 tablespoon of lime zest 1 teaspoon o nutmeg 🍒 🍒🍒Preparation 🍒In a bowl, mix cornmeal, flour, baking soda, and baking powder and set aside. In another bowl, crush the bananas and set aside. In a food processor, grate your coconut and set aside. Grate ginger and set aside. In a mixer, start mixing the butter and sugar. Mix. Add the eggs. Mix. Add the crushed bananas, grated ginger, lime zest, nutmeg, vanilla extract, and cinnamon,. Mix very well. Add the grated coconut. Mix. Alternate cornmeal and flour mix with the milk. Mix. Grease two to three pans and empty the batter. Bake for an hour at 350 degrees. Let completely cool off. Enjoy!

LEMON ROASTED SALMON WITH SWEET POTATOES AND BROCCOLINI 👫Tag A Friend That Would Dig This!👫 ➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖ Follow 👉 @foodie_lovers_world Follow 👉 @foodie_lovers_world Follow 👉 @foodie_lovers_world ➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖ INGREDIENTS: 2 medium sweet potatoes, cubed sea salt + fresh black pepper ½ teaspoon cumin powder a few tablespoons of olive oil 4 cups of broccolini (or broccoli florets) 12 ounces of wild-caught salmon filets 1 tablespoon butter 2 tablespoons lemon juice ¼ teaspoon garlic powder ⅛ teaspoon red pepper flakes and/or fresh thyme (optional) DIRECTIONS: Preheat the oven to 425ºF. Arrange the diced sweet potatoes on one sheet pan and the broccolini on another sheet pan. Drizzle both with olive oil. Top the sweet potatoes with salt, pepper, and cumin, toss to combine. Toss the broccolini with the salt and pepper. Bake the sweet potatoes for 15 minutes, set broccolini aside. While the sweet potatoes are baking, prepare the salmon. In a small bowl, combine the butter, lemon juice, garlic powder, pepper flakes, thyme, salt and pepper. Heat in the microwave for 15 seconds or until the butter melts. Line a small baking sheet with foil, spray with cooking spray. Place the salmon filets on top. Drizzle with the prepared lemon sauce. When the timer on the potatoes goes off, remove and toss. Place back in the oven along with the broccolini and salmon for 12-15 minutes. Check on the salmon and broccolini around the 8 minute mark. I like my broccolini extra crunchy so I only cooked it until it was bright green. Salmon is done when firm to the touch. Baking time will vary depending on the thickness of the filet. Divide the veggies and salmon into containers and allow to cool slightly before refrigerating. NOTES: veggies – You don’t have to feel limited to using broccolini here. Use whatever veggies you like. Baking time will vary so just keep an eye on it till it’s done to preference.

Perfect Chicken Alfredo 😍 INGREDIENTS 2 tbsp. extra-virgin olive oil 2 boneless skinless chicken breasts Kosher salt Freshly ground black pepper 1 1/2 c. whole milk 1 1/2 c. low-sodium chicken broth 2 cloves garlic, minced 8 oz. fetuccini 1/2 c. heavy cream 1 c. freshly grated Parmesan Freshly chopped parsley, for garnish. DIRECTIONS In a large skillet over medium-high heat, heat oil. Add chicken and season with salt and pepper. Cook until golden and cooked through, 8 minutes per side. Let rest 10 minutes, then slice. Add milk, broth, and garlic to skillet. Season with salt and pepper and bring to a simmer. Add fettuccine, stirring frequently for about 3 minutes. Let cook until al dente, 8 minutes more. Stir in heavy cream and Parmesan until combined. Simmer until sauce thickens. Remove from heat and stir in sliced chicken. Spaghetti and Meatballs INGREDIENTS 1 lb. spaghetti 1 lb. ground beef 1/3 c. breadcrumbs 1/4 c. finely chopped parsley 1/4 c. freshly grated Parmesan, plus more for serving 1 egg 2 garlic cloves, minced 1 tsp. Kosher salt 1/2 tsp. red pepper flakes 2 tbsp. olive oil, divided 1/2 c. onion, finely chopped 1 (35-oz.) can crushed tomatoes in puree 1 bay leaf Freshly ground black pepper. DIRECTIONS In a large pot of boiling salted water, cook spaghetti according to package instructions. Drain. In a large bowl, combine beef with breadcrumbs, parsley, parmesan, egg, garlic, 1 teaspoon salt, and red pepper flakes. Mix until just combined then form into 16 balls. In a large pot over medium heat, add 1 tablespoon oil. Add meatballs and cook, turning occasionally, until browned on all sides, about 10 minutes. Remove meatballs and reserve on plate. Add the remaining oil and onion and cook until onion is soft, 5 minutes. Add crushed tomatoes and bay leaf. Season with salt and pepper and bring to a simmer. Add the meatballs back into the pot, cover and simmer until the sauce has thickened, 8 to 10 minutes. Serve pasta with a healthy scoop of meatballs and sauce. Lasagna Roll-Ups 😍 INGREDIENTS 1/2 box lasagna noodles 1/2 large onion, chopped 3 cloves garlic, minced kosher salt Freshly ground black pepper 1/2 tsp. red pepper flakes 10 oz. fresh spinach 1 tsp. lemon zest 2 c. ricotta 1 large egg 1 c. freshly grated Parmesan, divided 1 c. marinara 2 c. mozzarella DIRECTIONS Preheat oven to 350º. Bring a large pot of salted boiling water to a boil and cook lasagna noodles until al dente. Drain. In a large skillet over medium heat, heat oil. Add onion and garlic and season with salt, pepper, and red pepper flakes. Stir in spinach until wilted. Stir in lemon zest and remove from heat. Set aside. In a large bowl, stir together ricotta, egg, and 1/2 c Parmesan and season with salt and pepper. Spread ricotta mixture onto one side of each lasagna noodle. Top with marinara and cooked spinach, then sprinkle with mozzarella and roll up tightly. In a large deep baking dish, spoon a layer of marinara on bottom of dish. Add the roll-ups and spoon more sauce onto each roll-up. Sprinkle more mozzarella and Parmesan over each roll up. Bake until bubbly and melted, about 20 minutes. Slow-Cooker Garlic-Parmesan Chicken INGREDIENTS 3 tbsp. extra-virgin olive oil, divided 2 lb. bone-in, skin-on chicken thighs Kosher salt Freshly ground black pepper 1 lb. baby red potatoes, quartered 2 tbsp. butter, softened 5 cloves garlic, chopped 2 tbsp. fresh thyme Freshly chopped parsley 2 tbsp. freshly grated Parmesan, plus more for serving. DIRECTIONS In a large skillet over medium-high heat, heat 1 tablespoon oil. Add chicken, season with salt and pepper, and sear until golden, 3 minutes per side. Meanwhile, in a large slow cooker, toss potatoes with remaining 2 tablespoons oil, butter, garlic, thyme, parsley, and Parmesan and season generously with salt and pepper. Add chicken and cook on high for 4 hours or low for 8 hours, until potatoes are tender and chicken is fully cooked. Burrito Zoodles INGREDIENTS 2 tbsp. extra-virgin olive oil 1 medium onion, chopped 2 cloves garlic, minced 1 lb. ground beef 1 tsp. chili powder 1/2 tsp. ground cumin Kosher salt Freshly ground black pepper 1 (15-oz.) can black beans, drained and rinsed 1 c. cherry tomatoes, halved 1 c. sweet corn 1 c. red enchilada sauce 1 c. shredded cheddar 1 c. shredded Monterey jack 1 (14-oz.) package zoodles DIRECTIONS In a large skillet over medium heat, heat oil. Add onion and cook until soft, about 5 minutes, then add garlic and cook until fragrant, 1 minute more. Add ground beef, breaking up meat with a wooden spoon. Cook until beef is no longer pink, about 6 minutes. Drain fat. Stir in chili powder and cumin, then season with salt and pepper. Stir in black beans, cherry tomatoes, corn, enchilada sauce, and cheeses. Let simmer 10 minutes, or until cheese is melty. Add zoodles and toss to coat in sauce. This is a grilled cheese sandwich, pickles, bacon and cheese. Oh So Yummy! 😋 INGREDIENTS 2 tbsp. mayonnaise 4 large slices sourdough bread 8 slices cheddar 6 slices bacon, cooked 6 slices dill pickle DIRECTIONS Assemble sandwich: Spread mayonnaise on one side of each slice of bread. This will be the outside of your sandwich that touches the skillet. On the inside of two slices of bread, place 4 slices cheese, 3 slices bacon, and 3 slices pickle. Top with another piece of bread. In a medium skillet over medium heat, cook until bread is golden on both sides and cheese is melty. Cuma kali ini I gunakan sardin tin dan Serbuk Kari Udang, Ketam dan Ikan Kering Adabi. . Cara penyediaan: 📝Tumiskan bahan tumisan bawang merah, bawang puteh dan halba hingga wangi. . 📝Masukkan rempah kari ikan, serbuk cili dan serbuk ketumbar. Tumis hingga naik minyak. Jika terlalu kering tambahkan sedikit air panas. . 📝Masukkan potongan cili hijau dan air asam dan didihkan. . 📝Masukkan air panas dan kacau sebentar. . 📝Bila mendidih masukkan daun kari dan terung. Day 94 of 100 small ways to manage time by Oliver Luke Delorie EAT BETTER As a teenager in my parents house, I was always taken the piss out of because I couldn't "cook" perhaps, if my family had not taken the piss out of me so much and not constantly tried to push me into the kitchen I may have taken an interest in cooking. However, it was easier to let my mum teach my sister and just continue to be ripped for not being able to cook. (I didn't enjoy cooking.....it's still not my favourite activity) As a young adult, I had a serious relationship with a guy 12years older than me with 3 kids...well, he had to cook for his kids on the days we had them, so, of course I didn't end up doing much of the cooking then either. I'd honestly say, it's only been in my late 20s and this last year that my cooking skills have really improved. I mean I'm not a chef, but I can cook some decent, relatively healthy meals now and make much wiser food choices than I used to. I'm still learning. For me I'd like to eat healthy and be efficient in the kitchen, because if you're not efficient it soon becomes very time consuming and tiresome (when it's not your favourite thing) I also have Rheumatoid Arthritis, so understanding what foods can irritate my joints etc is also important. I guess, if I could go back to my younger self, I would probably advise to learn as much about cooking as I could when I was younger. Just got done eating @ryansrestaurant in hanover and wow... The Mac & mashed potatoes were delicious while the chicken was slightly bland. The meatloaf was superb but the steak was horrible. It tasted like the chef cooked Bubbalicious gum & Laffy Taffy with steak and served it. It’s too tough, excellent flavoring though, but sooo stiff to eat. Menu kelmarin, tak sempat Sis Ina nak sharekan. . Kadang² teringin nak makan drumstick ayam. So bila dengan anak² ayam goreng paling sedap. . I gunakan Tepung Goreng Bistari. Perapkan dulu dengan bawang puteh, lada sulah dan sedikit garam. Kemudian baru perapkan dengan campuran tepung Bistari dan air. Lagi lama lagi sedap tau. . Sayur Campur Lemak, I guna apa sayur yang ada. Cauliflower, kobis Cina, sawi pak choy, telur puyuh, udang dan cili kering. Tumbuk bawang merah dan bawang puteh lalu tumiskan. . . Tambah air, biarkan mengelegak kemudian masukkan udang. Masukkan santan pekat, garam dan serbuk lada hitam kasar. Bila santan mula mengelegak, masukkan cauliflower, telur puyuh, cili kering yang dipotong².
