i am probably the biggest fan of mushrooms, i always loved them, even as a child. i add them to almost all of my favourite savoury dishes, like pasta, pizza, omelette etc. risotto is one of those dishes that we love to eat, but neither my father nor omma have the patience to make often. mmmm…. so creamy… so vegany. i made this 🍄 VEGAN CREAMY MUSHROOM RISOTTO 🍄 for a table of 12 non-vegans, and they all loved and devoured it. non-vegan approved! woohoo 🙌🏻// when it comes to comfort food, italian-style dishes are my favorite (right next to mexican food). bread, pasta, ‘butter’, ‘cheese’, and sauce 😋 did i say bread? italian is one of my favourite foods to eat and cook, and boston is one of my favourite cities to find authentic italian. when i was in italy, i watched italian moms prepare risotto without breaking a sweat. i have been craving it ever since but never thought that i had the skills to make it all come together. however, this turned out rich, creamy, and molto buono. buon appetito! 👅💦// oh, so creamy, rich, deliciously savoury and packed with mushroom flavour, this risotto is so satisfying to prepare and never fails to impress. i tend to have a wooden spoon 🥄 in one hand and a cup of matcha 🍵 in the other while preparing my risotto and it’s strangely therapeutic to stand there stirring and sipping!

It’s very weird how a person change. When I started the first blog 8 years ago I was baking only super small pastries, cupcakes (🙄), cookies, macaroons.. yes sometimes some cakes but nothing special. Now I’m OBSESSED with cakes and tarts. I love baking rustic tarts and try new cakes - probably this was the first time that I make a ‘ciambellone’ or pound cake (with a hole). We love eating them for breakfast and before going to bed (duhhhh), I share them at work because I can’t turn my place in bakery (even if I wish 😏) and everyone is a great tester, I get suggestions and opinions that help me doing better the next time. All these beautiful things could have happened with small pastries too but probably is the ‘sharing’ idea that there’s behind a cake or a tart that I love so much. pesto, spinach and feta cheese. Had lots of eggs and bits of veg to use up so frittata is the perfect solution as you bake in a tray and it’s all done.
There was a vogue of just eating egg whites but the yolk is where most of the nutrients are. It is packed with fat soluble vitamins A, D and K, essential fatty acids, minerals and other nutrients. It does contain cholesterol which is required for vitamin D production, hormones such as oestrogen and testosterone, and bike sale production. Contrary to previous belief, it does not increase blood cholesterol as thought before, and can actually help lower LDL cholesterol.
Eggs are a relatively cheap and nutrient dense food but look out for the welfare of chickens. Check if they are truly free-range - @steweeggs

First Day of S P R I N G
That means Spring Break is around the corner. You wanna impress all the kids on the last break of the year then make them these Chocolate Rice Krispies.
Recipe Inspo From my IG Cali Friend @shutthefigup
1/2 cup maple syrup
1/2 cup coconut butter
1/2 cup @terrasoul
raw cacao butter
1/2 cup @justins
Maple Almond butter
1 TBS @terrasoul
1 Box @onedegreeorganics
Sprouted Brown Rice Cacao Crisps
2 tsp Vanilla Extract
1/2 tsp Peppermint Extract
Peppermint Chocolate Spread(found a jar in my pantry not sure they make this anymore)•
In a sauce pan on low heat add Maple syrup, Coconut butter, & Raw Cacao Butter until everything is mixed together. Next add in Almond Butter and stir until everything is mixed thoroughly. Turn heat off add Cacao Powder, Vanilla, & Peppermint.
Add mixture to Rice Crisps in large bowl and Mix well.
Then place in a parchment lined pan.
Heat Chocolate Spread until melted. Then poor over the top. Place in fridge to harden.
**You can also melt 2 chocolate bars with 2 TBS coconut oil for the topping. ENJOY 😋

Figs are one of those produce items I need to buy every time I see them! I had so many plans for these: fig-arugula-proscuitto flatbread, roasted figs stuffed with ricotta, fig jam and melted brie grilled cheese... but decided on a Fig and Almond Cake from @nytfood.
