Directions Preheat oven to 400F/200C Butterfly the chicken breast in half, length-wise, leaving it intact on one side to create a pocket for stuffing. Add 3-4 stalks of asparagus and the provolone cheese in the center of each chicken breast and fold over, to enclose the filling. Season the outside of the chicken breast with salt, pepper, paprika, and herbs. Rub the seasoning into the chicken breast and set aside. Heat a large, oven safe pan over medium heat and add the butter. Once hot, sear the chicken until golden brown, about 3 to 5 minutes on each side. Cover the pan with foil, place in the oven, and bake until the chicken is cooked through, about 15-20 minutes. Remove from the oven and allow rest for about a few minutes before serving. .🚨 QUICK KETO DINNER RECIPE 🚨. .💚Lemon Dijon Salmon and asparagus💚. Try it out this weekend and let me know what you think! . . Recipe: (for two people) 1. Preheat oven to 375°. 2. In a small bowl mix together 1/4cup Dijon mustard, 1Tbsp olive oil, 1Tbsp lemon juice, 1-2 minced garlic cloves, and salt and pepper to taste. 3. Place 2 pieces of salmon (mine were approx 6oz each) on a small baking tray with parchment paper. Evenly add your Dijon mixture over the top of your salmon. 4. On a separate baking tray, place a handful of skinny asparagus (making sure to first snap off or slice off the bottom 1-2 inches of each piece - this area is tough and fibrous). 5. Pour 1-2Tbsp olive oil and salt and pepper over the asparagus and lightly toss. Make sure all of them are lying flat on the tray. 6. Place your salmon and your asparagus trays in the preheated over and bake for 10 minutes. 7. Rejoice, fans of breaded food but not carbs...almond meal is an amazing substitute! 1/4 cup has 3 net grams of carbs and your mouth will think its eating panko! This Cod was so good and very easy to prepare. I put butter and avocado into a cast iron pan on medium high. Dredged some egg, salt and pepper, then the almond meal and cooked until done. That’s mashed butternut squash, which does have some carbs, but it’s also very healthy and has fiber. Also pictured is sautéed cabbage. I just love it when you find a great low carb substitute!

I hesitated for a while to try the ketogenic diet. I was aware of the benefits of being in “ketosis”. But I knew you had to limit your carbs and I thought that meant limit your veggies. But that notion was far from correct. This past week I don’t think I’ve consistently ever eaten more veggies in my life. My blood shows I’m in the very beginning stages of ketosis and I feel great. I’m really excited to see how I’m feelin once I reach that therapeutic zone. My keto approach is to eat as anti-inflammatory as I can. That means tons of green leafy veggies, along with a few other vegetables that grow above ground, healthy oils and natural fats, and a very moderate amount of protein. I am supplementing a bit as well. The point I’m trying to get at is you can eat a wide variety of veggies and still hardly eat any carbs. This doesn’t just pertain to people who want to try keto. You can eat veggies like this on a daily basis and get full without hardly eating any calories! EAT YOUR COLORS AND YOUR MIND AND BODY WILL THANK YOU. ♻️♻️⁣ ⁣ This was a quick and tasty meal 🍽 ⬇️ RECIPE ⬇️⁣ ⁣ - Sauté 1 tbsp coconut oil and coconut rice. Add 1/2 tsp of turmeric (feel free to add fresh garlic, lemon, and salt and pepper to taste)⁣ ⁣ - bake baby broccoli and asparagus @ 400 degrees until they’re as crispy as you want em. I added 2.5 tbsp of extra virgin olive oil. ⁣ ⁣ - sauté the antelope (can be substituted for any animal protein source) in 2-3 tbsp of olive oil. ⁣ ⁣ - cook and egg however you like in that same pan you cooked your protein in⁣ ⁣ - add avacado and drizzle extra oil from the pan on to your plate. ⁣ ⁣ - go to town.
