I followed the @quaker
oatmeal cookie recipe with some changes to make it “healthier”. Swapped 1.5c total sugar for 1c coconut 🥥 sugar. Used 1stick instead of almost 2sticks of butter. Omitted the salt.

I got enchiladas stuffed with truffled mushrooms (helloooo 😍), spring veggies (that included something I’ve never tried before: fiddleheads - so cool!), & my friend got chile relleno that included pine nuts/cherries/lentils/etc. DANG 🔥 & We can’t forget the guac & salsa we had before, the amazing cocktails, & they had bombbb churros. Such a cool Mexican restaurant experience!!! I had to share!! 🌟 Hope you all are having a wonderful Friday evening!!
👋 heyyyyy! What’s up? How’s everyone? 😊 I hope everyone had a lovely Friday! I spent the whole day outside working from home on the patio, it got hot! I fired up the BBQ and made yummy portobello burgers. You can do this in the oven but it was too hot inside for me. Get the recipe down below 👇🏼
1. 2 Portabello Mushrooms
2. 2 Roma Tomato
3. 1 Red Onion
4. 1-2 Sweet Potatos
5. 2 Brioche Buns
6. Romaine lettuce
7. 2 tbsp Mayonnaise of choice
8. 1 tbsp Balsamic Vinegar
9. 1/2 tsp sugar
10. 1/2 tsp of sriracha
1. Preheat your oven to 450°F
2. Wash and chop your sweet potatoes into linear pieces for the fries.
3. Line a baking sheet with parchment paper and toss the sweet potatoes with oil. Season with salt and pepper. Place in oven, turning the sweet potatoes over halfway through cooking. Cook for about 22-24 min.
4. Pull the stems off from the mushroom caps. Cut the tomatoes into cubes and slice up the onions
5. Heat a small pot over medium-high heat. Add some oil Cook the onions, stirring occasionally, until softened. Add the tomatoes, vinegar and sugar. Cook until the tomatoes break down and the sauce is thick. Add salt and pepper to taste.
6. Brush the inside and outside of the mushrooms caps with olive oil. On another baking sheet, place the caps top-side down. Bake in the centre of the oven until the mushrooms are juicy and fork-tender about 10-12 min.
7. In a small bowl, combine the mayonnaise and the sriracha
8. Spread mayo mix over the top buns and assemble your burger 🍔 .

you are legit these paleo chocolate chip bars are insane! Better than the full gluten and sugar ones no joke and I don’t mess around with full on cookies! They are melt in your mouth! 1/2 cup of @solsticecanyon
1/4 cup of maple syrup
1/4 cup of coconut sugar
1/4 cup + 2 tablespoons of coconut oil
1 tsp of vanilla
1 tsp of baking soda

a very quick & light asian inspired dinner on this beautiful friday night. this meal is 99% products from @traderjoes
, took less than 20 minutes to make, and requires very minimal cooking skills. HOW TO👇🏻
1) heat up a big dollop of @fourthandheart
pink salt ghee on a pan over medium-high
2) spiralize 1 medium zucchini & thaw some @traderjoes
frozen carrots noodles
3) add carrot & zucchini noodles to pan with ghee, reduce to medium, & cook. i just jushed them around around every couple of minutes & kept them covered when i wasn’t attending to them
3) after about 5 minutes add in some chopped bell pepper to the pan & turn the heat up. mix it up, cover & continue cooking as before.
4) while your pan is doing work throw some green beans in the microwave to steam them. just put them aside when they’re or add them to the pan to make them crispy - i just really like steamed green beans so i didn’t do that
5) after ~5 more minutes add a huge tbsp or @traderjoes
korean bbq sauce to the pan and mix everything together
6) when your noodles & bell pepper are done cooking transfer them to a bowl & add the green beans
7) while your pan is still hot add more ghee & quickly fry up 1 @vitalfarms
egg (seriously takes like 3 minutes)
8) add your egg on top & sprinkle some etbtb and DIG IN!!!!🤤🧡

How do you remove sweat stains in the shape of an ass from chair fabric, btw? 🤔 Asking for a friend. 😐 Almost as attractive as the perfume that is my menstrual/anxiety sweat: these ridiculously gooey, crazy delicious almond butter chocolate chip brownies (ummm, they even have zucchini in them 🤫 - one of my mom’s favorite baked-good betrayals back in the day, as you can’t even taste it once they cool). 1. Mixed 1 cup almond butter + 1 @vitalfarms
egg + 1 medium grated zucchini with the excess water squeezed out + 1/2 cup coconut sugar + 2 tsp vanilla + 1/2 tsp sea salt + 1/2 tsp baking soda together until fully incorporated. Stirred in 1 chopped @hukitchen
2. Spooned batter into parchment-lined 8x8 baking dish + sprinkled with dark chocolate chips, then baked at 350 for 25ish min. Let cool + cut into squares. 🤤👌🏼

Lunch lately 🙌🏻 Some combination of greens, beans and sauerkraut with avocado, sprinkle of sea veggie blend and apple cider vinegar/evoo for dressing.
The star of the show here (hiding under all those greens!) were some leftover roasted curried chickpeas...better than croutons 💯!

but lets just say i have a love / hate relationship with it 🙈
one of the hardest things about eating out is that you don’t know exactly what goes in your food. most all restaurants leave ingredients off the menu or cook with different oils, spices or sauces, which can cause havoc on your digestive system if you are GF, VEG, V, DF... or just difficulties if you’re trying to be more aware of what you’re putting in your body.
so here are some tips that have helped me:
1. BE AWARE of what you’re ordering. if you don’t know what something is or question the cooking process just ASK!
2. KNOW what’s in the sauces! so many sauces are made with gluten, dairy, soy, sugar, etc. you name it, it’s hidden in there. to be safe, you could always just go for oil, vinegar, lemon, & salt and pepper
3. don’t get down on yourself if you eat something you “shouldn’t have” or didn’t want to. getting upset will just set you back more and cause more havoc in your life. DON’T FRET!

This Thai-Style Pumpkin soup is the perfect way to warm up as we say goodbye to the last few days of Autumn.
Pumpkins are loaded with beta-carotene, making them incredible for glowing healthy skin and strong immune systems. They are also a good source of vitamin C, to help keep those winter bugs at bay.
1 tablespoon olive oil
1 onion, diced
2 crushed garlic cloves
1kg kent pumpkin, peeled, chopped
4 white potatoes, peeled, chopped
2 tbs Thai red curry paste
2-3 cups Vegetable stock
400ml can coconut milk
Sauté onion & garlic in olive oil in a large soup pot until onion softens. Add potato, pumpkin, & curry paste, and cook for 5 mins while stirring. Add enough stock to cover veg, bring to the boil and simmer until veg is soft. Stir through coconut milk and blitz it all up until smooth!

Into the weekend like a Phoenix.
Here’s one of my favorite shots from Wednesday night’s Elemental Feast. This dish tells the story of Icanchu, a bird deity from Toba Mythology who drummed the world back into existence after a great fire burned everything to ashes. 🔥🌿
Later that night, while laying in bed, I was woken up (from a dream about perfect photo light) by the many sounds of a Northern Mockingbird. Since I pay close attention to the symbolic implications of such things (especially when it’s 3:33 am), I thought back to Icanchu the bird deity, and this dish. 🧞♂️✨🦅
The Mockingbird’s symbols include finding your sacred song, recognizing your innate abilities, learning through experience, overcoming fear, intelligence, power of song and story, confidence, and being a master imitator. As a storyteller and curator, the mockingbird also reminds me of my calling to a deep listening and then repeating and sharing important tales, through food.
I’m so grateful to everyone who attended this feast and who was a part of making it happen! 💫⚡️ .

MEMORIAL DAY WEEKEND GUILT-FREE RAW VEGAN CHEESECAKE 💙❤️💙. This was my first attempt at making cheesecake and oh WOW did this turn out 💯🙌🏼. Everything in this cheesecake is made from REAL FOOD ingredients such as sprouted nuts, dates, and coconut yogurt! 🥥 I used the recipe from @co_yo_usa

Deets: CRUST 👉🏼 1 cup soaked almonds, 1 cup soaked dates, 1/3 cup coconut flakes. Blend in food processor. Pat into a dish with parchment paper (or I used coconut oil). Put into freezer for 15 min.
FILLING 👉🏼 1.5 cups soaked cashews, 2/3 cup @co_yo_usa
coconut yogurt, 1/4 cup maple syrup, 1/4 cup lemon juice, 1 tsp vanilla, 1 tbl lemon zest, pinch sea salt. Blend til smooth. Pour over crust. Put back into freezer for 30 min to set.

Cover with red chili enchilada sauce.⠀
Sprinkle on cotija cheese or almond milk cheese.⠀
Bake at 350 for 20-35 minutes.⠀
Top with avocado, pico de gallo, and sour cream (optional).⠀

I want to burst in to a random fit of joy and then meltdown in tears from the sheer exhaustion of living that intensely.
I’m going to make up a phrase here to describe something: "negative energy"
This is what I’m calling time and energy spent ruminating about what is supposed to happen in my life. Energy I spend on fueling the story about what has to happen, what I hope does not happen, or masking my insecurities about these stories instead of pursuing my highest values in relation to reality. I burn a tremendous amount of time and energy rejecting some part of my present moment experience as “not ok” and trying to cover this thing that’s not the way it’s supposed to be instead of engaging honestly with what is.
