🖤❤️💚 this eggplant bake. I slice, salt then cook the eggplant in a little water until just soft then pour off any bitter juices. Eggplant can act like a sponge for oil so this way you have the creamy texture without the heaviness of oil. All the flavour comes from the fresh tomato, the garlic, basil & olive oil dressing, the parmigiana & crunch from sourdough breadcrumbs. It’s delicious. We had it on the weekend with roasted chicken. Last night the leftovers accompanied Middle Eastern spiced minced beef & pinenuts. A much healthier version of the stuffed eggplant my mum used to make. #eggplant #aubergine #delicious

Needing a change from Vietnamese food, I was completely surprised by this dish at my hotel restaurant in Saigon. Aside from the intricate presentation, the flavours were superb. Beef carpaccio in two styles, parmesan foam, quail egg with caviar, pickled mushrooms and a salad pastry basket. So much going on and it all worked. I've been binging on Ugly Delicious & Mind of a Chef this week so today I spent 11 hours making pork belly ramen from scratch. Started in the morning with stock made from mirepoix and bones, then smoking pork belly all afternoon and finished making noodles with eggs from our chickens. Great dinner and learned a lot for next time.

Here's how ya make 'em! Just mix together:
☀️1 cup old fashioned oats ground into oat flour (just blend ur oats in a blender!)
☀️38g (about 3/4 inches?) frozen banana, heated then mashed
☀️1/4 tsp baking powder
☀️1/4 cup plain Greek yogurt ☀️1.5 tbsp shredded unsweetened coconut
☀️1/2 cup unsweetened almond milk ☀️1 tbsp pure maple syrup
☀️1/2 tsp vanilla extract
☀️A squirt of juice from the pineapple u been choppin'
White coconut sauce drizzle:
6 g plain Greek yo + 3 g melted coconut oil + 2 g pure maple syrup
Walnuts + shredded coconut + pineapple ••••••••

Sweet pear of mine...Pears poached in spiced tea, left to cool, then topped with 85% Lindt chocolate, roasted almonds, shredded coconut and mint - must include the mint👌When it comes to cooked fruit, for me poached pears 🍐 take the prize.
I love this sort of dessert. Although it contains natural sugar (pear) and some refined sugar (chocolate) it also has nutrients that our body needs.

Weekends call for pancakes! Low Carb Cream Cheese Pancakes!
2 oz cream cheese
1 tsp erythritol
1 tbsp melted butter
1/2 tsp cinnamon
Combine ingredients together in a blender, then cook up in a skillet like pancakes. Makes 1 serving (4 pancakes.) .
Macros: 400 calories, 33g fat, 3g net carbs, 16g protein.

I am cooking for the week today. I don’t know why I don’t make quiche more often?? It is simple, you can add anything, and it is great reheated. Today I made ham, cheese, and onion. I have found that six eggs to one cup of half and half makes a perfect consistency.
Also making French onion soup 😋
