Never thought I’d write a cookbook with a 2 year old 🤷🏻♀️But there you go, we did it. I’ll remember it forever and it’s been the most special thing to create it all with my Clayton Oak. He helped me make basically every recipe on that wall behind us, he tasted ‘one biiiite’ of everything, a number of times over 🙈 and we spilled a LOT of things all over the floor. But I wouldn’t switch it for the world, and we had so much fun celebrating and eating treats with friends yesterday. Thanks to everyone who came to eat and celebrate with us!.

Another ours and theirs dinner. This one, a warm weather classic in our house.
First, an opinion: Sardines get a raw deal. Canned sardines — even worse. But really, if you are already a fish person, there are a lot of reasons to keep a couple cans in your pantry, including sustainability, a low-mercury count, price and really, a not so intensely fishy flavor. OK, that’s the end of my ode to sardines. Onto what we ate... OURS: Tomatoes, Peppadews, Kalamata Olives, Small White Beans and Smoked Sardines, mixed together. Tossed with arugula and a really bright shallot-lemon-red wine vinegar dressing, then topped with beautiful sardines from @chefjoseandres
(a gift from a friend). THEIRS: No peppadews or arugula. Everything else. Easton’s, heavy on the tomatoes, light on the olives; Reeve’s the exact opposite. (Yes, Reeve’s hand is reaching into Easton’s bowl.)

Cookie dough and caramel chocolate mini tarts. Aka mouthfuls of heaven! 🍫🍫

milk chocolate these tasty morsels are something you all need to make. The base is made with our cookie dough bites mix which is super versatile!
RECIPE // BASE
1 packet of cookie dough bites mix or you could use a regular cookie dough recipe.
1/4 cup maple syrup or rice syrup
1 tsp vanilla
50g butter or coconut oil .
2 tbsp Coconut Oil or butter
1 tbsp lucuma powder (optional)
1/4 cup coconut cream or almond milk or any milk
1 cup dates
1/3 cup maple syrup or rice syrup
1/4 cup almond butter or peanut butter 1 tsp vanilla
CHOCOLATE 100g chopped dark chocolate .
1. Line a 20x20 tin with baking paper or use silicone molds for tarts
2. Soak the dates in a warm bowl of water
3. Place the cookie dough bites mix into a bowl and add in the melted coconut oil, the sweetener and vanilla and and mix well.
4. Press into a tin and place in freezer.
5. Drain the dates and add them along with the remaining caramel ingredients into a blender and blitz until smooth.
6. Pour evenly over the base mixture and put back in the freezer.
7. Add some water to a medium saucepan or pot and bring to a very gentle simmer. Place a heat-safe bowl on top of the pot so that the bottom of the bowl is not touching the water.
Add the chopped chocolate to the bowl and stir occasionally with a spatula until smooth and melted.
Evenly spread it over top of the chilled caramel and set *these will need to be kept in the fridge or freezer before eating so they do not melt.

We made our oat cookies again as requested by Indie. Pretty sure she could eat 3 of these in one go if we let her 😅🤣! These are made with oat flour so is a great way to get oats into her as she won’t eat them whole!
Super easy to make these cookies too, just mix and bake! Oh and we added an extra chunk of choc on top 🤭🤭

Eat an entire packet of chocolate covered rice cakes. ⠀
Then go for an indulgence lunch of steak tartare and parmigiana. ⠀

Meat and good fats. ⠀
It's hard here in Italy but it's not impossible and I take on the challenge with a smile and a tear. ⠀
I look weird eating a chocolate rice cake with my coffee in the morning. But you know, I am a little weird, so I'm okay with this. ⠀
