Moody, snowy vibes going on with this beet cocktail. I had a leftover roasted beet from my most recent recipe, so I decided to make a cocktail with it, instead of the savory salad that *should’ve* happened. 🌿 #foodupcycling . . I’ll call this one the [UN]Sloppy Seconds 😜, since I used beet leftovers to make something gorgeous and delicious and boozy out of them. . . • 1/2 a roasted beet, coarsely chopped • 2 ounces @redemptionwhiskey high rye bourbon • 1/2 ounce ginger syrup • 3/4 ounce freshly squeezed lemon juice • 1/2 ounce @stgeorgespirits raspberry liqueur • 3 dashes orange @mmbitters • 1 @naturalsins dehydrated beet chip, for garnish . . 1. In a mixing tin, muddle the roasted beet pieces well. 2. Add the bourbon, ginger syrup, lemon juice, and raspberry liqueur. 3. Dry shake for 10 seconds and then add ice, shaking for another 10 seconds. 4. Double-strain into a chilled coupe and give 3 dashes of orange bitters to the finished drink. 5. Garnish with a dehydrated beet chip OR {better yet} candied ginger, which I didn’t have on hand because I ate them all. 🤷🏼‍♀️ . . I would recommend experimenting with JUICED beets, either raw or roasted. I took the lazier {efficient?} route and muddled mine because I didn’t want to break out the juicer for one, lonely beet. I would have probably gotten more juice, if I had done that, though. . . I’m feeling a chocolate and Cynar combination coming up for the other half of this beet hanging out in the fridge! @abaur48 , that one will be made with you in mind based upon your last comment! It’s finally snowing out here!! ❄️ This cozy afternoon-in is calling for baking a loaf of bread, catching up on computer work, and making a cocktail with the cranberry shrub I shared one post back. . . I scored some blood oranges this week {about time!}, and they made their way into this drink, a slightly spiced, low ABV refresher that features @drinkbigbs ’ award-winning Pommeau {a bourbon barrel-aged apple wine} and @ransomspirits ’ Old Tom Gin. . . • 3/4 ounce @ransomspirits Old Tom Gin • 3/4 ounce @drinkbigbs Pommeau • 1/4 ounce chai syrup • 1/8 ounce walnut liqueur • 1/4 ounce cranberry shrub • 1/2 ounce freshly squeezed blood orange juice, strained 🍊🍊🍊 • 2 dashes @dcembitterment orange bitters . . 1. Combine all ingredients in a cocktail shaker. 2. Add ice and shake well. 3. Strain into a chilled cocktail glass over a giant cube of ice. 4. Express a blood orange peel over the cocktail and garnish. . . HAPPY SATURDAY!! ❄️
I’m keeping up with my #foodupcycling this week and playing clean-out-the-fridge tonight. I forgot I bought some fresh cranberries at the beginning of the year. They never made it into sauce, but a peppery shrub is in the works now. ⚡️ . . This recipe is adapted from @seriouseats and is a cooked version versus a cold-macerated version, which is the kind I usually do. I’m feeling these will turn up in some Valentine’s Day tipples very soon. ❣️#staytuned . . • 1 1/2 cups fresh or frozen cranberries • 1 cup apple cider vinegar • 1/2 cup raw sugar • 1/2 cup water • 1/2 tablespoon black peppercorns • 1 cinnamon stick . . 1. In a saucepan, combine all ingredients and bring to a boil. You can get creative here and add a couple cardamom or star anise pods to the mix. 2. Reduce to low heat and simmer for about 10 minutes, until the cranberries pop. 3. Remove from heat and let the mixture cool. 4. Cover and store in the fridge for 12 hours. 5. Strain off the solids and store the finished shrub in a clean mason jar in the fridge for up to a month. . . And just in case you’re wondering how long a package of fresh cranberries lasts in the fridge, according to the website Still Tasty, it’s about four weeks. When you peel eight apples for an apple pie, you use the scraps and make apple pie-infused bourbon. 🥃 #foodupcycling . . This is an infusion I make at least once a year, and it’s so simple to make. It’s perfect served over an ice cube or alongside other ingredients within a cocktail. . . 1. Place apple peels in a mason jar and fill with bourbon. 2. Add baking spices. I used 1 cinnamon stick, 2 cloves, 1 star anise, and 2 allspice berries in a quart-sized jar. You could even sub a tea bag of mulling spices in place of the individual spices. 3. Remove the baking spices after a couple of days; otherwise, the infusion will be overly spiced. I’ve accidentally let my spices infuse over a month, and it was totally undrinkable. 😝 Just taste along the way. 4. Let the apple peels continue to infuse over the course of a week. 5. Once it’s reached your desired taste, strain off the solids into a clean mason jar. . . I’m curious - - what is your favorite and most delicious way you’ve used kitchen scraps that were otherwise destined for the trash or the compost bin? . . Wine syrups! 🍷 This recipe is perfect for holiday drinks - rich, juicy red wine infused with cinnamon, cloves, allspice, and star anise. . . I paired it with a wintry twist on a Manhattan, using @winc ’s Field Theory Touriga Nacional. The grape is actually a star player in many port wines, so it’s a great fit for a rich, spiced flavor profile. . . Our tree is finally up, we scored some Christmas cookies in the mail {Steve’s mom baked these!}, and I broke into a little present for myself, some @dramapothecary treats. 😏 . . We’re trying to make this holiday season extra special for us. It’s the first Christmas that the two of us won’t be working at a restaurant or bar. We’ve both been in the hospitality industry for over 15 years, and I couldn’t be more thrilled to actually celebrate without a guest list of over 500. . . This one’s called, “Scotch Pine.” It’s a scotch-forward, pear and smoky evergreen mashup with just the right about of bitter. . . • 2 ounces @glenfiddichwhisky 12-year • 1 ounce @stgeorgespirits spiced pear liqueur • 1 ounce freshly squeezed lemon juice • 1/2 ounce sage simple syrup • 1/4 ounce allspice dram • 3-4 good dashes @dramapothecary ‘s limited edition smoked fir bitters • cinnamon-dusted pear slices, for garnish . . 1. In a mixing tin, combine all ingredients together, minus the bitters and pear slices. 2. Add ice and shake well. 3. Strain into a cocktail glass filled with a few good cubes of ice. 4. Add the bitters, erring on the heavier side. 5. In a shaker tin, combine the whiskey, apple brandy, apple cider, honey syrup, lemon juice, and ginger liqueur. 2. Add ice and shake well. 3. Strain into a mug filled with ice. 4. Top with Finke’s Widow sparkling wine and garnish with a fresh sage sprig and an apple slice. 5. Lightly sprinkle cocktail with cinnamon. When you make a monthly trip to Whole Foods because you miss your city treats, and you score two bags of crushed ice from the cashier, you make tiki drinks, obvi! . . This one’s called, “The 39 Swizzle”, named after our 39th parallel here in Paonia. It’s a veryyyy loose interpretation of Jim McCourt of Prohibition in Charleston, South Carolina’s “The 56 Swizzle.” His features Jägermeister, lime juice, and orgeat, with fresh mint. . . Mine’s an Old Tom Gin and sage tiki cocktail. Layers on layers on layers of tropical and wintry flavors. In a mixing tin, muddle a few sage leaves with the orgeat. 2. Add the lemon juice and fill glass almost to the top of a tall glass. 3. Add the remaining ingredients and swizzle together until combined. 4. Top with more ice, drizzle with red wine, and garnish with a straw and a sprig of smacked sage. Ginger syrup is simmering on the stovetop right now, since I used the last of it in these bittersweet cider spritzes! It’s the one cocktail syrup, aside from simple, that I always keep on hand {recipe below}. . . We are about to reinoculate a stalled Chardonnay fermentation this evening 🤓, after a long afternoon of trench-digging for a new wall around the house. I’m so ready for a shower, a little writing session, and a cider. Or a shower cider ‘cause those are magical. . . Most ginger syrup recipes call for just water, sugar, and ginger. I learned a tip a while back when bartending with @readysetwasted {👋🏼 Chris!} which is to use citrus juice in the mix. It yields a much more interesting and complex syrup. . . • 1 orange, juiced • 1 grapefruit, juiced • 2 lemons, juiced • 1 cup water • 1 cup cane sugar • 1/2 cup unpeeled, coarsely chopped ginger root . . 1. In a sauce pan, bring all ingredients to a boil, stirring along the way, and reduce to a slow, low simmer. 2. Simmer for ten minutes, stirring occasionally. 3. Remove from heat and let steep until completely cool. 4. Strain out the solids through a chinois or through cheesecloth and store in the refrigerator for up to two weeks. 5. I’ll be sharing a fall spritz on the blog this week that can easily be made into a punch for Thanksgiving. It’s a low ABV apple cider sipper that features a favorite fall spirit of mine, Amaro Montenegro. 🍂 But first, can we talk ice molds? They’re so easy to make - just a bit of prep-work and some time in the freezer. I used a freezer-safe glass Pyrex bowl for this one, but you can get creative with your shapes. I’ve even used a small casserole dish or a mini bundt pan. 🍂 Fill your container with a few slices of seasonal fruits, sprigs of herbs, and complementary spices like star anise or cinnamon sticks. Fill with water, leaving just a little room at the top, and freeze at least 24 hours. 🍂 Once it’s frozen, carefully turn your dish or bowl upside down and run lukewarm water over it, gently releasing the ice. An eye-catching reward for basically effortless work. Our week has been filled with spreading compost, moving rocks, and sowing grass seed on our barren, dusty mesa. Riveting, no? Our goal is to once again tend a thriving garden, and this is a slow step one. 🌿 To celebrate, I made us some apple brandy cocktails and posed one on top of the rock wall we’re currently repairing. They’re cozy, balanced, and bright - and features one of my favorite fall spirits, applejack. 🌿 • 1/2 honeycrisp apple, coarsely chopped • 3/4 ounce apple brandy {I used @lairdsapplejack } • 3/4 ounce rye whiskey {I used @redemptionwhiskey } • 1/2 ounce @tamworth_distilling chicory liqueur • 1/4 ounce ginger liqueur {I used @newdealpdx } • 1/2 ounce freshly squeezed lemon juice • 1/4 ounce spiced pear simple • rosemary spring, for garnish 🌿 1. In a mixing tin, muddle the apple slices well. 2. Add the applejack, whiskey, chicory liqueur, ginger liqueur, lemon juice, and simple syrup. 3. Add ice and shake well. 4. Double-strain into a cocktail glass prepped with a large ice cube. 5. These chilly fall evenings have gotten me making cozy soups on the regular. I made @theclevercarrot ’s creamy potato leek soup last night and poured a glass of one of my favorite weeknight Chardonnays for today’s #sharedandpaired post {swipe thru’ 👉🏼}. 🌿 I’m always looking for wines that taste beyond their price-point. For just under $15, the 2015 @charlessmithwines ’ “Eve” Chardonnay out of Washington State seriously delivers. It’s balanced, crisp and lively, and lightyears away from being an oak bomb. 🌿 I loved matching the wine’s pear and apple notes with Emilie’s simple, satisfying, earthy soup. I used some homemade veggie stock and made the recipe vegan by subbing cashew milk. I also tossed a little parsley oil on top for an herbal punch. 🌿 The only thing missing was a loaf of Emilie’s sourdough bread. She’s a sourdough guru, and everything I know about baking it is because of her. 💞 Next time. Our Chardonnay babies are turning into WINE! We ended up making three kegs and one carboy of wine from the grapes we set aside this year. They’re all fermenting away and tasting GREAT! I haven’t messed it up yet! 🥂 Chardonnay gets a lot of flack for being boring or overdone with oak. I get that, but I also get that the grape can grow almost anywhere. That’s what can make it turn out both blasé or super unique. 🥂 It can be crisp or oaky, fruity or mineral-driven, still or bubbly, sweet or bone dry. For me, I love tasting Chardonnay grown in different regions. It’s a different wine every time. 🥂 I will add that my favorite way to drink Chardonnay is in a Blanc de Blancs Champagne. And if you’re being specific, I’ll take a @champagnepeters Les Chetillons 2008. Tonight’s experiment with a gifted bottle of aquavit from my friend, Marie, and her parents over at @azurapaonia was on POINT. 🍐 They gave me a bottle of O. P. Anderson that they’d picked up on a sailing trip in Sweden. I’d never tried it before, and it is quickly becoming one of my favorite fall spirits. 🍐 It’s driven with notes of caraway, anise, fennel, dried apricot, and toasted nuts. It’s aged in oak for eight months, and it fits in perfectly with spiced pear simple and @breckdistillery Bitter. This will happen again very, very soon. 🍐 • 1 1/2 ounces O. P. Anderson aquavit • 3/4 ounce Breckenridge Bitter • 1/2 ounce spiced pear and vanilla simple • 1/4 ounce toasted almond orgeat • 1/2 ounce freshly squeezed lemon • 1/4 ounce ginger syrup • sliced pears with cinnamon and rosemary sprigs, for garnish 🍐 1. In a mixing tin, combine all of the ingredients, along with a few large ice cubes, and shake well. 2. Strain into a chilled coupe. 3. Garnish with a slice of pear and lightly dust with cinnamon, tapped through a sieve. I’ve taken the past three weeks to “reset” since harvest ended, and it’s been completely worth the break. As soon as the last grapes were picked, I crashed HARD. 🍎 Today, I’m feeling a lot better and am getting back on some fall cocktail projects this afternoon. Sometimes you have to let nature smack you in the face to finally slow down. 🍎 I tend to be an all-or-nothing kind of person, which has its pluses and minuses. I’ve nixed coffee, alcohol, sugar, and animal products out over the past couple of weeks, and I feel recharged, well-rested, and in more control of my diet, as I’ve slowly reintroduced certain things back in. Moderation is so key. 😏 ...and let me tell you: that first sip of coffee feels so good! 🍎 I’m revisiting this favorite of mine, a honey crisp apple cocktail, with Old Tom gin, Pimm’s, ginger liqueur, lemon, honey-cinnamon syrup, and spiced orange bitters. I’m looking down into the neck of a glass carboy filled with freshly pressed Pinot Noir, along with a little Riesling and Chardonnay. We’re inoculating the juice tonight with yeast and seriously anticipating our very first, small-batch ROSÉ!! 🍇 We recently learned that parts of this vineyard were originally planted with Pinot Noir vines in the late 1980s, but they were ripped out and replaced with other white wine varieties. 🍇 A few rogue, own-rooted vines have survived over the years, so instead of lamenting their existence, we harvested their clusters and are making some garage wine with them! I’ve never made rosé before. This is so exciting!! 🍇 I’ll keep you posted on how it progresses. My favorite thing to do right now is to sit inside our cold fermentation room and place my ear to the kegs and listen to all of the fermenting grape juice. Happy bubbles, happy place. Cozy fall vibes tonight, including the requisite bonfire. 🍂 We took down six rows of bird netting out in the vineyard this morning and collected a solid handful of old vine wood. And now it’s time to celebrate!! 🍐 A round of these Spiced Pear Old Fashioneds, along with a blazing fire, and I’m good for the night. Well, almost. We just started watching season one of Twin Peaks: The Return, and I’m already in binge-watch mode. {I’ll have to make a cherry pie cocktail for you one of these days, @kyle_maclachlan !! 😜} 🍐 For the cocktail, combine the following ingredients, along with a few large ice cubes, in a mixing glass and stir well: • 2 ounce bourbon {I went with @eaglerarelife tonight} • 1/2 ounce spiced pear syrup {see notes below} • 1-2 dashes @mmbitters toasted pecan bitters 🍐 The spiced pear syrup is super simple. In a saucepan, combine equal parts sugar and water. I went with 1/2 cup of each. Add one coarsely chopped pear, one cinnamon stick, a couple cloves, and a star anise to the pan. Bring to a slow simmer, stirring along the way, until the pear is tender, about 5-7 minutes. Remove from heat and let the ingredients sit until cool and then strain. Store in the fridge for up to a week. Put in all of the fall cocktails. 🍐 HAPPIEST OF FRIDAYS!!! And an update: the bonfire can’t happen. The wind picked up, and it’s starting to rain! Guess it’s a Twin Peaks all-nighter. I decided to experiment with some of the leftover roasted squash purée from a post a few days back. Have you had success with squash cocktails? Sometimes the texture just isn’t right, or it comes out too vegetal. 🥃 Last year, I made a rum-based cocktail with coconut cream that was richly textured and delicious. You can find it over on my site {just search “pumpkin.”}. So, here goes a riff on a Sidecar. This one’s called, “I Call Shotgun”! 🥃 I was pretty pleased with the result. It is brandy-forward, and the squash lends a savory, toasty note. The walnut liqueur and citrusy Licor 43 pull it all together with balance. Just make sure your cinnamon-sugar rim is only lightly “kissed” with cinnamon. My heart is full today, and so is my glass. 🥂 We just picked the very last of our grapes yesterday. 15 tons of fruit, overall. I can’t even begin to process all that’s happened out here over the last six months. 🍷 I couldn’t have made this dream of mine and @big_zen ’s a reality and done this crazy grape-growing and wine-making project without the help and 💞 from our team, volunteers, crew, visitors, and online cheerleading team. 🍷 I’m going to treat myself to a massage and a little bubbly and shake off the past three 14-hour workdays. These together were pure magic. 🍷 Sherrie is known for her simple, nourishing, comfort foods, and this savory, herbaceous, fall-inspired toast will quickly detox you from your go-to avo toast addiction. 🍷 I paired it with Benovia’s Sonoma Mountain Grenache. It’s light on the palate and shows off peppery red fruits, dried rosemary, and pronounced acidity. Perfect for this Mediterranean-inspired dish. 🍷 I’ve been sipping whites all summer long, and I’m slowly easing into reds. I realized I left my Nikon out in the rain 🙃, we pressed our final pick of Chardonnay 🙂, we are dipping down into the mid-twenties tonight 🙃, but I managed to make a couple of @kaleandcaramel ’s pomegranate & thyme spritzers before it all went south 🙂. 🌿 We still have grapes on the vines, so Steve and I have given ourselves the pep talk to stay up most of the night, and we have the necessary shots of espresso waiting in the wings for later. 🌿 We will take turns watching the wind speed, while monitoring the wind machines. So, here’s round two of my cocktails celebrating #WorldPeaceDay . Taking my friend Matt of @theamateurmixologist ’s lead and creating a peace-themed cocktail, I present to you, the “Flower Power.” 🌷 To me, flowers embody friendship, openness, and love. Faith, one of the owners of @smallpotatoesfarmbakery , graciously let me drop by the farm earlier today, while they were technically closed, to pick up some edible flowers for this drink. 🌷 Almost every ingredient in this cocktail is made with FLOWERS: elderflowers, violets, roses, lavender, and peonies. It’s floral without tasting soapy or like your great grandmother’s perfume. It’s balanced and dry on the finish. 🌷 The best part about this recipe is that it yields two cocktails. One to enjoy and one to share. Last night, we made pasta, watched "Big Night", and sipped Barolo. Today, I'm sharing Tessa of @saltedplains ' savory, cornmeal-crusted, GF tomato tart and pairing it with one of my favorite summer rosés. 🍅 I'm starting a new series here, called #sharedandpaired . I'll be making and sharing recipes from my favorite bloggers, recipe developers, and cookbook authors and pairing them with a delicious and aptly matched wine each Wednesday. 🍅 I've been missing aspects of being a floor sommelier, and it's so much fun to make someone else's recipe and find the perfect wine for it. And it's super enjoyable to taste it all! 🍅 Tessa's savory, cornmeal-based tart boasts a ricotta and basil spread. I subbed local chèvre, which worked out perfectly. Add heirloom tomatoes, and you're golden. These are from my friends, Gabe and Heather, over at #homesteadorganics . 🍅 The rosé, Nortico's 2016 pale pink Vinho Regional Minho, is from Portugal and is made from three indigenous grapes. It's lively, refreshing, crisp, and perfectly suited for seasonal tomatoes and sour chèvre. The watermelon and red berry notes add to the wine's easy-going nature and complexity. 🍅 I always find that rosé is a natural go-to for ripe, late-summer tomatoes. The acid matches the acid, and in this particular dish, its vivacity is a perfect complement to the rich cheese. 🍅 Thanks for this wonderful recipe, Tessa! The next three weeks here are going to be some of the busiest but most exciting days of my life. Our small but mighty team of four, along with some incredibly kind volunteers, will be harvesting between 16 and 20 tons of fruit we've painstakingly nurtured over the past few months. 🍇 I never thought how much owning a small business would entail. I mean, I knew what we needed to do or what we needed to order or when things should be executed, but I didn't expect the sleepless nights or feelings of isolation or ongoing anxiety that would also accompany this incredible change of life. I care, at times, too much. 🍇 I'm grateful for what nature is teaching me. How it's really not all in my control. It's ultimately up to the weather, the seasons, and the grape-buyers. What strong lessons I'm learning in letting it all go. I'm an apt pupil, but I really just want to cover my head and sleep in some days. 🍇 For you independent business owners or freelancers, what advice can you share? How do you avoid burnout? When your cocktail stirrer matches your cocktail ingredients. 🌽 I was inspired by @zestfulkitchen 's recent corn margarita {SO good} and made a little riff of my own. We have one more day of Pinot Gris harvest ahead of us. We will start picking just after dawn tomorrow morning. One wine variety down, three to go. 🍇 The end is in sight and planned out as best as possible. Mother Nature always wins, however, despite our best preparations and desires for timeliness. Cheese boards and extra gingery frozen peach mules are keeping up the morale during this harvest season. 🍇Our harvest team of eleven woke up before dawn to pick over a ton of grapes before noon. We are about 2/3 finished with the Pinot Gris plot!! 🍾🍾🍾 Next up is Sauvignon Blanc on the 18th, on my Aunt Shir's birthday. When I was little, my mom would make me take three big bites of anything she made that I didn't want to try. I think she made those bites extra big on purpose. 😏 I am trying to give Fernet Branca more of a chance in cocktails, and tonight's tiki concoction was a win. 🍓 I affectionately named this one, "Three Big Bites." I actually liked the results and enjoyed the alpine herbaceous character of the Fernet with my alpine strawberries. 🍓 We are prepping our vineyard tomorrow for our very first grape harvest, and I already have some bubbles chilling to celebrate. We will be picking about 1 1/2 tons of Pinot Gris grapes at 7:00 AM on Wednesday. This crazy dream of mine and Steve's is unfolding, and it's blowing my mind and simultaneously wearing me out. 🍓 • 3/4 ounce aged rum {I used @flordecanarum 4-year} • 1/4 ounce @plantation.rum pineapple • 1/2 ounce @fernetbranca • 1/4 ounce ginger liqueur {I used @newdealpdx } • 1/2 ounce black peppercorn strawberry syrup {see notes} • 1/2 ounce freshly squeezed lemon juice 🍓 1. In a mixing tin, combine all ingredients with ice and shake well. 2. Strain into a cocktail glass filled with ice, either crushed or cubed. 3. Garnish with halved strawberries. 🍓 For the strawberry peppercorn syrup, crush 10 to 12 small strawberries in a saucepan, add 1 cup of water and 1 cup of sugar, along with about 15 peppercorns, slightly cracked. Bring to a boil and then remove from heat. Let sit until cool and then strain into a jar. Store in the fridge up to 2 weeks. Today was a day that made me stop and slow down. One of our favorite regulars from the restaurant drove out from Denver to Paonia, along with a friend, to tour the local wineries and made it a point to visit our vineyard. 🌿 We laughed and sneaked some pre-noon Prosecco and talked about wine. I think tomorrow will be better because of this unexpected pause. And that's what I'll call tonight's cocktail, The Unexpected Pause, a dry, herbaceous, bitters-forward refresher that showcases the orchard fruits sublimely. 🌿 • 1 ounce @jackrabbithillfarm CapRock gin • 1/2 ounce @suzeofficial • 1/2 ounce @hausalpenz Rothman & Winter Orchard Apricot • 1/4 ounce peach syrup • 1/2 ounce freshly squeezed lemon juice, strained • 2 drops @dramapothecary wild mountain sage bitters • dried sage leaf, for garnish 🌿 1. In a mixing tin, combine the gin, Suze, apricot liqueur, peach syrup, and lemon juice. 2. Add ice and shake well. 3. We *finally* got an oven, and I didn't kill anyone in the waiting period, so we celebrated with basil-peach spritzes tonight!! 🍑 I'm also celebrating having kept my sourdough starter fed and alive over the past five months {cc: @theclevercarrot 😝}. I'm ready to christen this oven with something delicious and sourdough-y. 🍑 This spritz is an iteration on Alex Day of @deathandconyc 's "Tunnel Vision", out of the book, SPRITZ. I'm calling mine, "One-Track Minded", and it's basil-forward, peachy, and session-able. 🍑 • 2 ounces basil-infused @giuliococchi Cocchi Americano • 1/2 @jackrabbithillfarm peach eau de vie • 1/2 ounce freshly squeezed lime juice • 1/2 ounce peach syrup • 1 barspoon @vermouthdolin Génépy des Alpes • 1-2 ounces seltzer . . . 1️⃣ In a mixing tin, combine all ingredients, except for the seltzer and the basil sprig. 2️⃣ Add ice and shake well. 3️⃣ Strain into a Collins glass or stemless Champagne flute, filled with a few ice cubes. 4️⃣ Top with seltzer and garnish with a sprig of smacked basil. . . . For the basil-infused Cocchi Americano, take a large sprig or two of basil and combine it with eight ounces of Cocchi Americano and let sit for a couple of hours. Strain off and store in the fridge. I'm giving homemade spiced blackberry liqueur a go. Letting these organic, freshly picked berries take at least a weeklong soak in gin, raw sugar, star anise, cinnamon, and a vanilla bean pod. 🥃 I have a feeling it'll be great in some late-summer cocktails. In vineyard news, we received our grape scale and our picking bins, and it's looking like our first haul of Pinot Gris begins next Thursday!! 🍷 Cocktail-crafting and sharing them with friends is a form of therapy for me, during this crazy harvest season. Today was "free cucumber with any purchase" day at Abundant Life Organic Farms. 😜 I couldn't pass it up! It went into a cooling, basil- and ginger-spiked gin cocktail. A perfect reward after getting all of our recently delivered picking bins up our steep, hairpin turn driveway. 💥 I posted a few behind-the-scenes snippets on stories. This project is so surreal!! 🥒 • 2-3 slices cucumber, plus a ribbon or two for garnish • 2-3 basil leaves • 1 ounce gin {I used @peachstreetdistillers Jackelope} • 1/2 ounce grapefruit liqueur {I used @leespiritsco } • 1/2 ounce ginger syrup • 3/4 ounce freshly squeezed lime juice • seltzer to finish 🥒 1. In a mixing tin, muddle the cucumber well. Add the basil leaves and gently muddle. 2. Add the gin, grapefruit liqueur, ginger syrup, and lime juice. 3. Add ice and shake well. 4. Double-strain into a Collins or tall glass, lined with cucumber ribbons and filled with a few ice cubes. 5. Finish with seltzer water and stir to incorporate. 🥒 It looks like we will be harvesting the Pinot Gris NEXT WEEK. We *finally* got an oven, and I didn't kill anyone in the waiting period, so we celebrated with basil-peach spritzes tonight!! 🍑 I'm also celebrating having kept my sourdough starter fed and alive over the past five months {cc: @theclevercarrot 😝}. I'm ready to christen this oven with something delicious and sourdough-y. 🍑 This spritz is an iteration on Alex Day of @deathandconyc 's "Tunnel Vision", out of the book, SPRITZ. I'm calling mine, "One-Track Minded", and it's basil-forward, peachy, and session-able. 🍑 • 2 ounces basil-infused @giuliococchi Cocchi Americano • 1/2 @jackrabbithillfarm peach eau de vie • 1/2 ounce freshly squeezed lime juice • 1/2 ounce peach syrup • 1 barspoon @vermouthdolin Génépy des Alpes • 1-2 ounces seltzer . . . 1️⃣ In a mixing tin, combine all ingredients, except for the seltzer and the basil sprig. 2️⃣ Add ice and shake well. 3️⃣ Strain into a Collins glass or stemless Champagne flute, filled with a few ice cubes. 4️⃣ Top with seltzer and garnish with a sprig of smacked basil. . . . For the basil-infused Cocchi Americano, take a large sprig or two of basil and combine it with eight ounces of Cocchi Americano and let sit for a couple of hours. Strain off and store in the fridge. I'm calling it, "The Angry Orchard." 🥃 It's kind of an Old Fashioned, but with the wine-based addition of #cardamaro , it tastes similar to a Manhattan. And it encapsulates our day completely. 🍇 We finished bird-netting our Old Wente clone Chardonnay plot, so maybe the turkeys and ground squirrels and magpies will leave the grapes alone. It's been a war-zone around here, but we're looking good for harvest!! Bitter, nonetheless. 🍑 A couple of tips. If you have overripe peaches, make a syrup out of them. Take two peaches, chop them up, and combine with one cup water and one cup sugar. Bring to a boil, remove from heat, let cool, and strain. ❄️ Also, for really clear ice cubes, go with distilled water. I recently listened to #modernbarcart 's podcast on making the perfect ice. Take notes: your cocktails will be better. Looks like Eric has an amaro-themed episode queued up next. I'll be sure to listen out in the field tomorrow. . . . • 1 1/2 ounces Colonel E. H. @hollyandflora ・・・ We just went through the most intense hailstorm but were rewarded with the most beautiful rainbow. I must say that I'm nervous to check on the grapes later. 🍇 Since we couldn't get back on the tractor to apply bird netting, I decided to make a cocktail, naturally. ☀️ This one is a sour, bittersweet, balanced blend of stone fruits and Suze, a gentian-forward aperitif that takes the center stage and brings herbal complexity. 🍹 I'm going with "Bittersweet Harvest" on this one, since we got our much-needed moisture, but sadly, it brought along unwanted hail. . . . • 1 1/2 ounces @suzeofficial • 1/2 ounce @hausalpenz Rothman & Winter Orchard Apricot • 1/4 ounce Palisade peach syrup • 3/4 ounce freshly squeezed lemon juice • 1 egg white • smacked sage sprig, for garnish . . . 1️⃣ In a mixing tin, combine all ingredients, except the sage and any ice. 2️⃣ Dry shake for 20 seconds, add ice, and then shake hard for 30 more seconds. 3️⃣ Strain into chilled a chilled coupe and garnish with a sprig of fresh sage. Give it a good smack before garnishing. 4️⃣ Make another STAT, especially if you got any hail damage. 🙏🏼 . . . It's a family-run farm that boasts an honors-system cooler, stocked with all of the summer produce. 🌿 I am making us all some crushed blackberry Negronis, a favorite in our house. Blackberries pair so perfectly with the gin, Campari, and sweet vermouth. Such an easy and interesting iteration on the classic. 🥃 I have been eyeing all of the amaro-driven cocktails posted this week for #amaroweek and cannot wait to make some of them. And thanks, @mmydrinks , for hosting such a fun and creative event. This one has an alpine focus and calls for the following ingredients: . . . 🥃 4-5 ripe blackberries 🥃 1 ounce #stgeorgespirits Terroir Gin 🥃 1 ounce #anticaformula_official sweet vermouth 🥃 1 ounce #stgeorgespirits Bruto Americano . . . 1️⃣ In a mixing tin, muddle the blackberries until pulverized. 2️⃣ Add the gin, sweet vermouth, and Bruto, along with a handful of ice. 3️⃣ Stir until well chilled and incorporated, and then double-strain into a chilled cocktail glass stocked with a large ice cube, preferably with a star anise pod suspended inside it. . . . I'm hoping to post a couple more of my own #amaroweek recipes, but I have a feeling I'll be running a tractor or threading bird netting throughout the rest of the vineyard. Those Pinot Gris grapes I posted almost a week ago are turning a deeper shade of purple, and we just finished trimming back the extra grapes and foliage. Next up is applying bird netting, and then the waiting game until harvest begins!! 🍇 This cocktail is aptly named, The Grape Cluster. It's comprised of three ingredients all made from some iteration of wine grapes --- • Pisco, a high-proof spirit made by distilling fermented grape juice • Lillet rosé, an aromatized wine made with Bordeaux varietals and macerated liqueurs • a pink peppercorn rosé syrup I made from some leftover wine {I know, I know...🙈} 🍇 It's a balanced riff on a Pisco sour, and the addition of an absinthe rinse brings an herbaceous, licorice-like complexity to the wine-like characteristics of the drink. We've been making this on the nightly this past week. 🍇 • 1 1/2 ounces peach-infused @encantopisco • 3/4 ounce @lillet1872 Rosé • 1/2 ounce pink peppercorn-infused @carboywinery rosé of Syrah syrup • 1/2 ounce freshly squeezed lime juice • rinse of @leopoldbros Absinthe Verte . . . 1️⃣ Give a coupe a rinse of absinthe. Discard the liquid and set the rinsed coupe aside. 2️⃣ In a mixing tin, combine all remaining ingredients. Shake to incorporate. 3️⃣ Add ice and shake again. 4️⃣ Strain into a chilled coupe. 5️⃣ Garnish with a smacked basil leaf or a fennel frond. Or you can do as I did and use your discarded sour Pinot Gris grapes. 😏 . . . Making a wine-based simple syrup is a great way to use up leftover wine or wine you've forgotten about. Trust me, it happens. Mix equal parts wine and sugar and bring just up to a slow simmer. Add any extra flavorings, like pink peppercorns, in this case. Remove from heat, strain, cool, and store in the fridge. Next up for me is a chamomile-infused Chardonnay syrup.
