The past few days I’ve been moving and getting into a new routine. Life is changing and as much as I talk about embracing the change...it’s been pretty difficult.
I have a tendency to try and hide the struggle when shit gets tough because I don’t like to be looked at as weak. I’ve always thought of myself as a “strong, independent woman” but how can you be strong if you can’t express how you feel?
I’ve had so many difficult conversations and have cried in front of more people than I’ve ever allowed myself to do in the past...and it’s been oddly empowering.
Learning to love yourself means learning to embrace and FEEL your emotions, even when they suck.

with such a busy schedule but this recipe was so quick and easy 🤩 Who needs Chinese takeaways?😏 This taste exactly like my favourite choice from my takeaway days - without any of the baddies, and won’t leave you feeling tired, craving sugar, or sluggish & full of brain fog unable to concentrate.

What you need: ➡️ Green Isle Cauliflower Rice bags x 2
➡️ 1 pack of Ready to Eat Prawns (or defrosted) ➡️ 10ml Sesame Oil, 1/2 tspn tahini paste
➡️ Garlic (1 clove or minced) & Grated Ginger ➡️ Spring Onions x 4, 1 Large Sweet Red Pepper
➡️ Chilli Flakes, Pine Nuts & coriander ✨

Every weekend I try to make 3-4 days of lunches. All 5 was overwhelming so I wasn’t doing anything and instead ate a lot of Thai food which definitely wasn’t helping, so I scaled it back! This one was super easy, too - the chicken sausage is precooked, so I crisped it up in a pan while my veggies roasted.
•2 AmyLu andouille chicken sausages
•100g Yukon baby gold potatoes
•100g brussel sprouts
*toss the raw veggies in a dressing for some extra flavor, season, and roast at 350 for 30-40 minutes.
