Today, we’re making cauliflower risotto. I’m sure by now you’ve tried cauliflower rice and realized that with a bit of TLC, it can be turned into just about anything (pizza crusts, rice, crunch texture, soft texture). After doing the hemp heart “wild rice” recipe, I started experimenting more and more with cauliflower to get a creamy texture that I was longing for in a risotto. Lo and behold, here it is!
1 tablespoon olive oil
2 cloves garlic
4 medium baby bella mushrooms
1 cup chicken broth
1 medium cauliflower, riced
¼ cup heavy whipping cream
¼ cup Parmesan cheese
1 teaspoon tarragon
Salt and pepper to taste
This makes a total of 4 servings of Low Carb Cauliflower Mushroom Risotto. Each serving comes out to be 143.75 Calories, 10.35g Fats, 6.31g Net Carbs, and 5.25g Protein.

I used to be really great at not wasting my time on social media.
But then I started a food account where everything I saw made me excited.
So I guess I jusitified staring at the screen because I was getting new ideas and recipes and having fun.
But I've realized I've come to that place again where I am spending a lot of my spare moments on the gram.
Those mindless moments on the gram.
And you guys. We can't resort to being mindless zombies on the gram.
As much as I love seeing beautiful dishes and healing stories I've realized I need to take responsibility for my soul on this interweb.
I need to limit my time on this hypnotic device.
I don't want to live on auto pilot.
How to do this? Well I'm trying to figure that out. I think I will schedule structured times for social media during the day. Or just set a timer for 10 minutes 3 times a day. Or just see a quick update of my faves, post my things, and get off the gram.
But it's gotta happen. We gotta be concious of our consumption, and that includes media!

pancake recipe from the good ol’ days 😎 (which is probably the better choice imo 😉). This recipe is very filling, makes super thick cakes 🥞 and isn’t super calorie heavy 😋. I used to make them on the daily which you’ll remember if your an oldie 😆. So here’s a thrown recipe for you guys:
2 portions (92g) eggwhites *ir 1 egg*
1tbs (25g) unsweet applesauce
30g (no idea on the measurement equivalent sryyy, maybe 3tbs?) oat flour
1tbs coconut flour (7g)
1/2scoop protein powder of choice (or add more oat flour and coconut flour)
1/2tsp baking powder
Water to make a *thick* but pourable batter.
.mix, let sit, then cook on a griddle 💃.

Because no matter how I feel beforehand, once I've worked out I feel better about myself, I feel stronger, accomplished and happier. I am doing this for my health, both physical and mental. I am doing this for me. 💪
