Home Chef Review Bucatini all’Amatriciana with prosciutto and pecorino garlic bread
This was really good! We liked this one a lot, especially hubby. I used an extra ciabatta that I had in the freezer because we love our garlic bread and hubby likes me to load him up on carbs on Friday nights for his Saturday morning bike ride. The spread that was prepared for the garlic bread consisted of olive oil, minced garlic, parsley and pecorino cheese. There was plenty of it for the extra ciabatta, which was awesome. I also sprinkled some Brady Street seasoning by Penzys on top. It was wonderful! The bucatini noodles are a lot of fun. It’s like eating really long macaroni noodles... it’s one of my favorite pasta types but sadly I never see it out at restaurants so it was nice cooking it at home. The sauce was plentiful. In the past there hasn’t always been enough sauce provided for pasta dishes and typically I add extra but not this time! Instead of chopping the prosciutto I just tore it into pieces and added it to the pot. We loved this meal and I would probably order it again! However, I have a big chunk of speck (similar to prosciutto) in the fridge that I definitely want to use to recreate this dish in the meantime. Home Chef Review Classic veggie lasagna
So I'm not one to alter a Home Chef recipe too much but I made some changes with this one. Basically because Hubby doesn't like mushrooms I didn't add them. Then I decided to save the zucchini for dinner tomorrow. Then I added Italian sausage. So the only veggie that survived was the spinach. Other than that I followed the recipe exactly. There was PLENTY of sauce which was great! Lots of mozzarella cheese was provided as well. There wasn't much ricotta but since Hubby isn't a fan of gobs of ricotta this was perfect for him... I however would have liked to see more. Also, I've never made a lasagna in a cast iron skillet before so that was a first. Oh! Portions were HUGE! The lasagna is on 12" dinner plates and almost go from end to end. More than enough food for 3-4 people. I couldn't finish mine. Vegan Garlic Herb Breadsticks with Marinara Sauce 🥖🍅
For the dough:
2 1/2 teaspoons quick rising yeast I like Red Star quick rise yeast
1 1/4 cup warm water
2 Tablespoons brown sugar
1 teaspoon salt
1/4 cup olive oil
3 cups white spelt flour all-purpose flour is fine, too
For the topping:
3 cloves garlic crushed
1 1/2 Tablespoons dried Italian seasoning
3 Tablespoons olive oil
2 cups Marinara sauce for dipping 🌞Instructions
✨Put the warm water, brown sugar, and yeast in a large bowl, and let sit for about 10 minutes so the sugar feeds the yeast. It will look a little bit foamy on top.
Add the spelt flour, salt and 1/4 cup of olive oil to the yeast and water mixture, and mix together. Knead the dough with your hands just a little bit until it is smooth and elastic. If it seems too wet, add a bit more spelt flour.
✨Take a handful of dough, roll it into a log, and place it on a parchment lined cookie sheet. Stretch it out until it is about six inches long.
✨Repeat with remaining dough. You should get about 8 breadsticks.
✨Set aside to rise for one hour.
Preheat oven to 375 degrees.
Mix the crushed garlic, Italian seasoning, and 3 tablespoons olive oil in a small bowl. Brush this mixture over the tops of the breadsticks.
✨Bake at 375 degrees for 10-15 minutes until golden brown.
✨Enjoy with warmed marinara sauce for dipping if desired.
