yesterday. I’ve not cooked a lot with chicory, but I knew I wanted to make a really simple salad that would let these beautiful bitter greens shine. I decided to go with @bonappetitmag
’s chicory and apple salad with browned butter vinaigrette. I added in bacon and shaved fennel and it was so delicious. My only complaint is that the vinaigrette congeals quickly (because, butter) so the salad is best if dressed right before eating. 💚💚💚

My girlies and I spent the morning making these killer pretzels. We topped them with salt, everything seasoning, and herbs de Provence salt. #snowday

Made pancakes again this morning! Although admittedly they were nowhere near as photogenic as these ones 🙈 so let’s just pretend.
Whether it’s braai/barbecue time or even just a side dish for steak or chicken,these stuffed potatoes are a great idea.A variation from the regular baked potatoes because the stuffing has cheese and onion inside,I prepared them in the microwave first and then in the oven just before serving,and even my kids enjoyed them.The recipe is below,hope u enjoy them as much as we do❤️

Start by washing 5 medium sized potatoes.Prick with a fork and warm in an oven proof dish in the microwave for 4 minutes.Once time is up,turn and heat again for another 4 minutes.Remove from the microwave and cut sideways down the centre.Scoop out the potato,being careful not to damage or tear the skins.Add salt,pepper,30g of butter and 4 tblspn milk to it,and mash thoroughly.Cut 1/4 onion as finely as possible and squeeze out the water,add this in.Add in 4 tblspn of sour cream and 1/4 cup of grated Gouda cheese.Scoop this back into the skins,and top with more cheese and some fresh flat leaf parsley.Pop into a grill oven until cheese is melted and serve hot!

1 tablespoon hemp protein powder

1/4 teaspoon cinnamon
1 cup almond milk

Vegan Roasted Potato Leek Soup
This hearty and flavourful soup is very simple to make and perfect for a cozy winter meal. The flavour of the potatoes is enriched by roasting them first and can be done ahead of time so it'll take you only 15 minutes to make this delicious soup once you're ready for it!
Ingredients •2 lbs potatoes, peeled and chopped (weigh once peeled)
•4 tbsp olive oil, seperated
•4 large leeks, cleaned and cut in 1/4" slices
•3 ribs celery, chopped
•4 cloves garlic, minced
•1 tsp dried thyme
•1/2-1 tsp ground black pepper
•1/2 cup white wine
•1 tbsp miso paste
•6 cups vegetable stock
•1/2 cup cashews, soaked
•1 cup water
•Salt, to taste
Preheat the oven to 425 degrees F. Line a large baking sheet with parchment paper or oil well. Once oven has reached 425 F, toss the potatoes in 2 tbsp of olive oil on the baking tray and roast for 20-25 minutes, flipping every 10 minutes. They are done once they are cooked through and are lightly browned.
In a large soup pot over medium heat, heat the remaining 2 tbsp of olive oil. Saute the leeks and celery until they soften, about 8 minutes. Add the garlic and saute another minute until fragrant. Stir in the thyme and black pepper. Deglaze the pan with the white wine. Add the vegetable stock and roasted potatoes, turn the heat to high and bring to a simmer. In the meantime, in a high powered blender, combine the miso paste, cashews and water. Blend on high until smooth, about 2 minutes then stir into the soup pot. Turn off the heat. Blend the soup with an immersion blender until smooth. If you don't have an immersion blender, you can use a high powered blender - blend the soup in batches, filling the blender only about 1/2 full each time so it doesn't burn you. Add more salt and pepper, to taste. Enjoy with pretty garnishes such as sliced radish, chives, sauted leeks slices, fresh thyme, and pumpkin seeds.
