Ahh.. daydreaming 💭of one day cruising 🛳 the Greek islands, top deck, sipping on a rosemary infused gin tonic, wondering if I’d have enough time to taste enough of the exquisite dishes that beautiful country has to offer... someday, lovely people, someday.
Meanwhile, I settle down and pamper my family with flavors from distant places. Greece 🇬🇷 being on my mind and all, I decided to take meatballs to the Greek islands 🌴. Lamb and walnut meatballs in a turmeric yogurt sauce, sprinkled with feta cheese and pine nuts . 🙀😻
Are you drooling 🤤 yet? .
*Walnut Lamb Kofta Meatballs
In a bowl mix 1 pound ground lamb, 1/2 cup ground walnuts, 1/2 cup bread crumbs, 1 cup parmesan cheese, 1 egg, 2 Tbsp olive oil, 1 tsp salt, 1/2 tsp dry ground oregano, 1/2 tsp dry ground mint, 1/2 tsp pepper. Roll into balls, roughly the size of golf balls.
Place them on a greased baking sheet. Bake @190C
/375F for 18-20 minutes.
Meanwhile in a large pan, sauté in olive oil 1 tsp minced garlic, 1/2 chopped onion. Add 2 cups yogurt, 1/4 cup lemon juice, 1 tsp turmeric powder, salt and pepper to taste. Heat through without boiling. When the meatballs are baked, let them rest 2 minutes, then add to sauce. Turn to coat. Serve warm sprinkling some feta cheese, parsley and toasted pine nuts on top.
Careful! Don’t daydream too much! 😍
