Cooked a nice lunch for myself after a few days. Last week, with the husband out of town, I cooked only dinners and leftovers was lunch for me.

yet? It’s tucked in my blog with the Mushroom Thyme Pasta Bake, and the Chicken Divan. And really is surprisingly yummy and creamy and the BEST to eat on a day where you really want to fit a @g2gbar
or a giant chocolate chip cookie because the fat is SO LOW.
In the original recipe, you boil the cauliflower in chicken broth like @pinchofyum
—but last night I WAS LAZY and just MICROWAVED a couple bags and threw them in the blender with the rest of the ingredients and it was perfect! And so eeeeeeasy.
So if you haven’t tried the sauce yet.. perfect time to - now that it takes five minutes. 💁🏼 Make the pasta bake, or make your own ..stuffed full of veggies and chicken and you’ll be shocked at how much you get for the same carbs as... like every other meal. And it’s normal pasta. 😱(Personally not a fan of the higher protein pastas.. you don’t save THAT many carbs and it adds quite a bit protein which means less chicken for me. 😒SURPRISE!—- not into that. But it exists if you struggle to hit protein. 👌🏻)

Hello, lovelies!! Despite all this redonkulous snow we've been getting on this SECOND DAY OF SPRING 🙄 , today I wanted to pretend like I was lying on a beach in a very warm place, like Greece. 💆🏻♀️ So I worked on a recipe that I've toyed with for a while, and I finally got it down perfectly🙌🏼 This is greek yogurt with candied blood orange and saffron syrup. It is light and fresh and sweet and fun and will take you far far away from cold winter weather too!

afternoon delight: banana mango “nice” cream with strawberry jam, all made from scratch by yours truly.
banana mango nice cream:
•purée 2 frozen bananas and 6 cups frozen mango chunks in blender or food processor until smooth
•pour into dish, cover, and freeze for at least 2 hours •TIP: allow fruit to thaw for around 30 minutes to help your blender out!

A fresh new season is upon us and I'm very excited to finally introduce you to ReganBaroni.com, formerly Up Close & Tasty. The blog is still alive and well, it's just under my name now - @reganbaroni
So, why the change? At the end of last year, I had to re-evaluate how I was handling my photography business. I felt lost in my world of being a food photographer and a blogger. I was bidding on jobs that weren't a good fit for me and I was spending a lot of time developing content that not many people were seeing. I had to take a break and figure out what I was doing wrong. Have any of you had to re-evaluate before? .
In a nutshell, it came down to me not really knowing my brand. When I say "brand" I'm not talking about logos, colors and websites (although I do have a new website now - woohoo!). Branding starts at the core of your business... you. What do you do? How are you different? There are a lot of amazing food photographers out there, so for me to say, "I'm a food photographer" and "my work" is what makes me different isn't exactly compelling. In fact, it's forgettable. Do you know how you would answer those two questions about your business?
Overall, getting on top of my brand was very challenging, incredibly eye opening and eventually, refreshing. As much as it was a business exploration, it was also a very personal exploration. And, while I will continue to share recipes with you guys, I will also be sharing my mistakes and what I learned.
