Strawberry White Chocolate Cake Pops
Makes about 20
For the cake:
½ box white cake mix
For the Frosting:
1/3 cup white chocolate chips
7 tablespoons softened butter
½ cup powdered sugar
½ tsp vanilla
¼ cup dried strawberries, crushed
For the dipping:
1 1/2 cup Ghirardelli White melting wafers.

Make cake mix as directed. Let cool. (If using the whole cake mix, cut cake into 2 equal parts, freeze one for later use). Using your hands, crumble up the cake into small pieces. Set aside.
Make the frosting. In a small bowl, melt chocolate in the microwave, stirring every 20 seconds until completely melted. Set aside. In the bowl of an electric mixer, using the whisk attachment, beat the butter for 2 minutes on high speed (6), scraping down the sides of bowl as needed. Beat in powdered sugar and vanilla until smooth. Add in melted chocolate and beat until smooth. Mix in crushed strawberries.
Shaping the Cake Balls: Mix in the crumbled cake with the frosting until well combined. Using a tablespoon, scoop cake mixture and shape into round balls. Chill balls in the fridge for an hour before dipping.
Dipping: Using the microwave, melt the chocolate wafers in 20 second increments, stirring after each until completely melted. Take your balls out of the fridge. Dip a lollipop stick about ½ inch into the chocolate, then insert into the center of the cake ball. Dip in chocolate and coat completely. Sprinkle with more crushed strawberries. Let dry. Repeat this process with each ball. Enjoy!

Step 1: heat oven to 350. Douse broccolette in avocado oil and curry powder. Roast until crispy (~15 min), add golden raisins to pan halfway through.
Step 2: set a large pot and a small pot of water on the stove top, bring both to a boil. Large pot for soba noodles, small pot for soft boiled egg.
Step 3: mix some sliced scallion, roasted peanuts peanuts, lime juice, and chopped basil. Also thin out some tahini with a bit of water.
Step 4: assemble!! Line bottom of bowl with tahini sauce. Pile on the crispy broccolette, the basil+peanuts, cooked soba noodles, & a soft boiled egg. Sprinkle with maldon and Aleppo!

Kota Kinabalu: Beaufort Noodles. By now, Gerald is getting the idea that Sabahan food is about the different noodles and he likes this one. It’s fried egg noodles with char siu (roast BBQ pork), pork slices and lots of local veges, all covered in a clear gravy. It’s very similar to Wat Tan Ho (fried flat rice noodles with egg gravy). I love that cherry pie has its own day. I’ve been making my favorite pie for 25 years now, pretty much the same way, always tweaking the crust a little. I now use lard and butter, makes a really flaky and crispy crust 🍒🥧🍒🥧 .

some cauliflower, onions, and carrots today, slathered in an olive oil zaatar marinade, on top of buckwheat udon noodles. There is some kale, tofu, and parsley rolling around here too. And a tahini miso dressing a la #vegan
to finish things off.
Spaghetti Squash Lasagna Bowls (GF, Vegan & Paleo)
Craving Pasta but not the carb crash that comes after?
This is my go-to plant based comfort meal. 🍝
1 spaghetti squash
2 cups marinara sauce ( I use @raoshomemade
1 package @kitehillfoods
Vegan ricotta (or 1 cup of preferred option)
1/4 cup nutritional yeast
1 Tbsp Italian seasoning
1 cup spinach
Olive oil or Avocado oil (I use @chosenfoods
avocado oil spray)
Preheat oven to 375°. Cut spaghetti squash in half length wise and scoop out seeds. Put oil, salt and pepper on each inside half.
Place cut side down onto baking sheet and bake for 40 minutes.
Let cool enough to hold, then scrape the strands out with a fork into a large mixing bowl.
Combine the spaghetti squash, marinara sauce, nutritional yeast, spinach, 1/2 cup ricotta and seasoning, then divide it into each squash half.
Top with the remaining ricotta cheese and sprinkle of nutritional yeast and Italian seasoning.
Put back in oven on broil for around 5 minutes, watching carefully so the cheese doesn't burn. .
