! Honestly, I don’t even remember when the last time I had tacos was. Which is a tragedy at best because I love tacos. 🤔 Generally when I mention veggie tacos, some of my clients think that it sounds boring. I convince them otherwise by giving them different combos and flavors to play with. With the last bits of my nectarines, I made a nectarine and avocado salsa that I added over top my black bean and shredded brussel sprout tacos. 🌮 My tacos also got some corn and extra cilantro. Verdict? Delicious. 10/10 would eat again. 🙌🏽
Nectarine and Avocado Salsa
1 medium sized nectarine, diced
1 avocado, cubed
Juice of 1 lime
Zest of 1 lime
Bunch of cilantro, diced
1-2 scallions, thinly sliced
1/4 tsp red pepper flakes 🌱
Add all ingredients to a bowl and and lightly toss to combine and fully coat in lime juice. Top over any meal you fancy. I think it goes great in bowls or tacos as a fun condiment. Have a great night! 💃🏽

Today I was planning the next couple of weeks and I realized just how many wonderful friends and clients I get to collaborate with and the fun, life changing things that are happening. 🥖The gluten-free industry is a $B biz and studies show that around 33% of Americans avoid gluten but only 0.7% of Americans have celiac disease - an actual gluten allergy.
🥖What’s gluten? Gluten is the main protein found in wheat and some other grains like spelt, rye and barley. In people w/ celiac, the immune system tries to attack gluten proteins which damages the gut. But in people w/out celiac, should they avoid gluten? Is gluten *sensitivity* a thing?
🥖Unfortunately there’s no lab test to diagnose gluten sensitivity, just an elimination diet approach, and it’s unclear if gluten itself causes symptoms.
🥖What’s a gal to do!? Bottom line is gluten and wheat may be fine for some people and not for others. Try keeping a food journal and if it’s clear wheat makes you feel sick, avoid it. Be sure to choose real foods that are naturally gluten free, not gluten-free products that are often junk. And if you can tolerate wheat, watch the quality! Choose whole, organic, unprocessed grains.
