(If you put these frozen vegetables in the fridge overnight it will only take 2-3minutes instead). 340kJ 2๏ธโƒฃOpen a tin of tuna/sardines/salmon in healthy oil and pour in. 650-1100kJ. Lemon ๐Ÿ‹ and thyme is one of my favourites recently and it flavours the vegetables very well ๐Ÿ˜‹ 3๏ธโƒฃHave a piece of fruit ๐Ÿ‡๐Ÿˆ ๐Ÿ๐ŸŽ 150kJ and/or add half a handful of nuts ๐Ÿฅœ 405kJ to balance this light meal. Happy #TacoTuesday ! Honestly, I donโ€™t even remember when the last time I had tacos was. Which is a tragedy at best because I love tacos. ๐Ÿค” Generally when I mention veggie tacos, some of my clients think that it sounds boring. I convince them otherwise by giving them different combos and flavors to play with. With the last bits of my nectarines, I made a nectarine and avocado salsa that I added over top my black bean and shredded brussel sprout tacos. ๐ŸŒฎ My tacos also got some corn and extra cilantro. Verdict? Delicious. 10/10 would eat again. ๐Ÿ™Œ๐Ÿฝ . Nectarine and Avocado Salsa 1 medium sized nectarine, diced 1 avocado, cubed Juice of 1 lime Zest of 1 lime Bunch of cilantro, diced 1-2 scallions, thinly sliced 1/4 tsp red pepper flakes ๐ŸŒฑ . Add all ingredients to a bowl and and lightly toss to combine and fully coat in lime juice. Top over any meal you fancy. I think it goes great in bowls or tacos as a fun condiment.
