Just another variation of my raw chocolate cheesecake which I made for a girls night a while back 👯♀️ Almond butter and chocolate with coconut, chia and cocoa dusted chocolate truffle balls on top. Partly coz I’m too lazy to do any fancy piping but mostly because girls just love sexy balls 🤩 I know my girl @bos.kitchen
will agree as she loves em as much as I do🤪
Chocolate almond butter raw “cheesecake” with an Oat and almond crust
170g old fashioned gluten free oats
100g natural blanched almonds
1 cup of soft pitted medjool dates
1/4 cup of melted coconut oil
1/4 tsp salt
1 tsp vanilla bean paste
Add all the crust ingredients except the dates and coconut oil into the food processor and pulse until you have a fine meal. Then add the dates and pulse until a sticky mixture form in the bowl. You want to keep the dates chunky rather than a smooth paste. Press the mixture into the baking tin so it’s even at the sides. Place in the freezer to firm up while you prepare the filling.
Chocolate almond butter Filling
2 1/2 cups of raw soaked cashew nuts ( soak at least 3 hours beforehand )
3 tbs smooth natural almond butter
2/3 cup coconut oil
2/3 cup raw cacao powder
2/3 cup maple syrup
1/2 cup coconut milk ( canned variety )
1 tbs vanilla bean paste
Add the cashews, maple syrup, vanilla and coconut milk to the food processor and pulse until completely smooth like velvet. Be sure to scrape any mixture down from the sides. Then add the rest of the filling ingredients and pulse until smooth and creamy. Pour mixture on top of the prepared crust and freeze until solid for at least two hours. Once you are ready to serve your cheesecake put in the fridge 30-60 mins before hand to thaw and then keep what’s left refrigerated for up to 3 days.
