Happy state fair season! I went twice this year... Spent my morning pacing my teammate (along with my other teammates) as she ran her progressive tempo on the track. Then we went to the Student Wellness Center to do some cross training on the stationary bikes. I eat this salad almost every day. This restorative and healing powerhouse hosts foods high in nutritional density, rich in antioxidants, micronutrients and phytochemicals. If I could patent it I would. Choose from the following categories: GREENS BASE (3 or more) kale, collard/mustard greens, swiss chard, bok choy, spinach, arugula, brussles sprouts, cabbage, watercress. VEGGIES (3 or more) The veggies are best raw but you can eat them boiled or roasted, or combination of both. I like to shred them or cut in small pieces....broccoli, cauliflower, broccoli rabe, onions, leeks, mushrooms, bell peppers, asparagus, tomatoes, sweet potatoes, zucchini, artichoke, edamame, avocado, carrots, green peas, beets, kohlrabi, radishes, butternut squash, cucumber, zucchini BEANS (1 or more) chickpeas, lentils, peas, kidney/black/pinto/soy, green beans GRAINS (1 or more) buckwheat, quinoa, farro, barley, brown rice, amaranth, millet SEEDS & SUPERFOODS (3 or more) pumpkin, sunflower, sesame, flax, chia, hemp, goji, berries NUTS almond, brazil nuts, cashews, walnutS HOMEMADE SALAD DRESSING my current fav: olive oil (best you can afford, cold pressed, tip-peppery/bitter after taste indicates the best olive oil, what you taste is the oleocanthal - the anti inflammatory agent) white wine vinegar, honey mustard (Maille or Domaine des Vignes are best) honey (manuka) salt and pepper. I often add garlic and/or tahini. Mix it all well, pour dressing. Enjoy. Today was such a wonderful and eventful day with @bewellwithemily at the @upbeetandrooted vegan pop up market. Oats are by far my favourite for breakfast and for so many worthy reasons too. 1️⃣Firstly, they’re extremely cheap, easy & versatile making them a great fit for a variety of different lifestyles. 2️⃣Secondly, the nutritional value that they offer is too good to pass up. They provide a great source of dietary fibre, slow releasing carbohydrates and did you know that per 1 cup they also contain 10grams of protein? Been eating this for dinner a lot lately! Grass fed burger from @circlecfarmfl , kohlrabi pasta with marinara sauce, and roasted asparagus. My "weekend" technically started this afternoon when I got home from work and I've been chilling out ever since. Think I might turn this into a "me night" and make some tea, read a book on the couch, maybe paint my ugly toenails. I'm super tired but it's been a rewarding week and so I feel very satisfied. Speaking to a new client yesterday, I realized people know WHAT to eat and what NOT to eat. The struggle comes with convenience. Let's be real, ain't nobody got time to meal prep all day every Sunday. Then comes Monday morning and we're grabbing pre-made breakfast sandwiches because it's the only thing we have time for. My "secret"? Stash your pantry, fridge, and whatever nooks and crannies you can with "grabbable" HEATHY snacks. Don't make healthy options complicated. Nuts and grapes are my go-to. I literally always have them in the house. Why? Because they're good and healthy and blah, blah, blah but also because they're quick and EASY. No meal prep required. This weekend has already been CRAZY! I leave Monday for my freshmen fall semester at Pitt so my mom and I have been running around like crazy shopping. Yesterday we did a thing... MATCHING TATTOOS (3rd pic). I’m so happy that I have this to remind me of her even when we aren’t together since I’ll be 4+ hours away💖💖 ••• We also enjoyed lunch at one of our favorite spots yesterday, Bluebell Inn! I got the black bean burger (bun, black bean and rice patty, avocado spread, pico) & a side arugula salad (arugula, shaved veggies, cheese, poppy seed dressing). I’m ALL about those healthy treats🙌🏻🙌🏻 100% banana nice cream w/ Whole Sol vegan cookie dough OMG😍 . . Can I be completely honest? For a long time I was scared of bananas. My GI doctor told me that bananas were probably one of my big trigger foods since they’re high FODMAP and were making my digestive issues worse. For a while I completely stopped eating bananas and apples (which are also high FODMAP) religiously. If any bars or desserts had the fruits they were off limits. It was so hard because these had been such easy staple foods in my diet, especially as a college student. . . BUT I’ve learned that just like anything else in life, balance and listening to your intuition is the way to go. I slowly started eating apples and bananas again because I craved them, and with so many other dietary restrictions it’s nice to be able to grab a piece of fruit and go. I also realized that if I combine them with fat and/or protein, my body is able to tolerate them better and my symptoms aren’t that bad or sometimes don’t even appear. . . Soooooo, I’ve been spending the summer eating lots of banana nice cream and continuing to explore what my body can and can’t tolerate when it comes to high FODMAP foods. Life is short, sometimes you just have to eat the nans🍌🍌🍌

This might be my favorite dip I’ve made and it’s so simple. All you need are tomatoes, blueberries (must be fresh) and feta. I don’t measure the ingredients, I eye ball everything and go by what I think looks perfect! I’ve always eaten it with a toasted baguette, but the store didn’t have whole wheat!
