I have been soo bad for posting lately lool sorry, I will get back to it asap. This was a meal I had a few days ago on Sunday!! We had just been on a boat and we were headin out to de school later, so Cat and I studied for a few hours in @eerlijkamsterdam
. We absolutely love it there, the staff are so so kind, and the food is amazing! I asked about butter on this meal, and the manager told me that in the process of making the bread, the ingredients are soaked in milk! So he provided a crazy tasty gluten and lactose free alternative! This meal is that bread toasted, with hummus, and then roasted and fresh veg over the top.
Roasted root vegetables with sunflower seeds, garlic mushrooms, broccoli and home made humous 🌱🌱🌱

tofu, spinach, sautéed cavolo nero (kale) and broccoli, fresh toms, boiled egg, sesame seeds.. and a homemade ginger/tahini/miso dressing👌🏻

This is one of my favourite go to dinners. I always make double, even triple so it gets me by for a few lunches .
5 chicken thighs sliced
10 shredded brussel sprouts
1 large zucchini grated
2 carrots grated
1 tbs vegetable stock paste (I make my own)
1/2 cup water
Pan fry chicken until browned in your favourite oil. Add vegetables and stock, stir. Cook for a few minutes and then add water. Continue cooking and stir as required until cooked to your liking!
I threw in a handful of slated peanuts before serving to add a nice crunch!

throw back my gluten free low FODMAP granola a few weeks ago when i had to make ross hide the jar on top of the cupboards so i couldn’t reach as i ate pretty much the entire batch in one evening. i swear i could live off this stuff, especially with dairy free dark choc chips, fruit and maple syrup on top 😍🙌❤️ who wants the recipe?!

Inspired as usual by Anthony William, who has a blog online where you can find this recipe (potato nachos). I have almost perfected the spicy vegan queso without nutritional yeast. It’s made w boiled carrot & potato, raw onion, jalapeño, garlic, lemon, and water in the good old @vitamix.
