Got everything at Aldi‘s and I must say, they are starting to upgrade there choices. Bag of spinach (8oz for $1.29), 4 baby zucchini ($.99), dozen eggs. Granted I had some rice left at home, but that is cheap as well. Regarding whole grains, I personally prefer rice over pasta even though their GI is about the same. However, rice has often fewer calories and satisfies me sooner than pasta does...dm if you‘re interested on more details.

Lunch • January 18th // Had one of my favs for lunch — salmon salad 😋 I use @wildplanetfoods
sockeye salmon + 1/2 cup red bell pepper, 1/4 cucumber, ~3 handfuls of spinach, 1/2 avocado, 1/2 cup rice, juice from 1/2 lemon, salt and pepper to taste 🐟 So yummy and filling!

When I make salads in the dining hall I pretend that I’m at Whole Foods😂 Honestly, it makes me realize that the salad bar on campus isn’t all that bad 🙊 My go to has been: spinach, mixed greens, arugula, sunflower seeds, cranberries, and grilled chicken with a coconut vinegar and oil dressing 😋🍴Off to pick up some last minute books / necessities. Breakfast • January 18th // Good morning! ☀️ Today is yet another snow day, but hopefully much more productive than yesterday 😅 Having some oats this morning (1/2 cup thick rolled oats, 1 cup water, 1 tsp vanilla, pinch of salt) with pomegranate, banana, and cinnamon 😋🍌 I braved the snowy roads last night for this banana (#priorities

Lunch • January 17th // Hello my little chickpeas!! Today’s lunch was a quick mix of 1 cup quinoa (prepped ahead and left in fridge), 1/2 cup bell pepper, 1/2 cup sweet baby lettuce, 1/2 avocado, juice from 1/2 lemon, 1/4 cup chopped carrots, 1/4 cup of chickpeas, 1/4 cup of @wildbrine
beet and red cabbage kraut, and coconut aminos (like a slightly sweeter version of soy sauce with less sodium) 😋 You guys it’s SO SNOWY OUTSIDE!!! ☃️ I am so grateful I can just lounge in my PJs all day, do homework, and catch up on @cwtheflash
