We have released our interview with Cup of Excellence winner Mauricio Salaverria from Divisadero. Moe is a key partner to us in El Salvador. Our coffee comes from the beautiful Finca Himalaya which is located right on the opposite mountain of his famous washing station, Divisadero. We buy the whole production of Moes Pineapple Bourbon - which is a natural processed Orange Bourbon that undergoes partial anaerobic fermentation; the reason for the intense pineapple flavour of this coffee. This Jhon Wilson is a stunner! Some coffee taste great because of the varietal and process. This coffee proves a washed Castillo can be very very delicious in the right terrior and under great care... That delicious apple/ red currant note and sweetness 🤯
A brewing tips - this benefit from higher brewing temperature (I brew at 97c this time) and longer brewing time.
