dish!👇🏾 🍛 Living Coconut Curry🍛
Sliced zucchini, sliced red bell pepper, chopped broccoli (or any combination of veggies you prefer. -Place riced cauliflower and mixed veggies in two separate dishes.
-Season cauliflower rice with a squeeze of lime juice and coconut aminos and stir well. -Add lime juice and coconut aminos to mixed veggies and allow to marinate. *I like to then place my rice and veggies in my dehydrator to allow the food to warm and the flavors to come together. .
Coconut Curry Sauce:
1 cup Coconut milk
2 tablespoons Coconut aminos
2 Sundried tomatoes
Red pepper flakes
-Add all ingredients except spices to your Vitamix or high speed blender and allow to blend until hot. (Use the “hot soups” setting on your Vitamin) Once done, and seasonings and blend on low.
Plate your cauliflower rice and veggies, pour sauce on top and enjoy. 😌
