In the Kitchen: Bacon, Tomato, Scallion Cream Cheese on a Bagel After running behind schedule with school drop off and trying to get errands done this morning, I came home super hungry. Realizing I had been running around on an empty stomach, I wanted something quick and satisfying but not calorie heavy. Then I remembered a lady on one of the food groups I follow mentioned making this breakfast for her husband after seeing something similar on a TV show. The thick slices of tomato provides a fresh and juicy counterpart to the cream cheese and salty bacon, with the scallions helping to cut through any heaviness. With the help of thin bagels, whipped cream cheese, and center cut bacon, I was able to recreate the dish and keep the calorie count for all of it at under 300! INGREDIENTS: - 1 plain thin bagel - 2 Tbsp whipped cream cheese - 1/2 stalk scallion, chopped - 1/2 Roma tomato, 4 thick slices - 3 center cut bacon DIRECTIONS: 1. Toast your bagel. 2. Mix scallions into the whipped cream cheese. Spread onto toasted bagel. 3. Layer tomato slices onto the bagel. 4. Eat Well Feel Well Reminder for the Week. ⁣ ⁣ One of the most important things I’ve learned on this health and fitness journey, which has been relearned many times especially this past week while I’ve been sick and not on point with my nutrition 🤦🏻‍♀️ is how much better your body feels when you fuel it with proper nutrients 😎⁣ ⁣ When I eat the right foods in the right portions I feel amazing 🙌⁣ ⁣ 👍energized⁣ 👍literally thinner⁣ 👍my clothes fit properly ⁣ 👍My skin is clear ⁣ 👍my hair is shiny 💁🏻‍♀️⁣ 👍my nails are strong and long💅🏻⁣ ⁣ When I’m not eating well I feel ⁣ ⁣ 👎bloated 🤰🏻⁣ 👎draggy ⁣ 👎exhausted 😴⁣ 👎my face breaks out ⁣ 👎my nails are constantly breaking😬⁣ ⁣ This is clearly common sense. I mean we all know that being healthy is eating right and exercising 😉 but easier said then done sometimes. When life throws you curve balls it’s easy to fall off track and back into old habits. Which is exactly what happened to me this past week with a house full of sick people 😷⁣ ⁣ But you know what I’m glad it happened, it was the reminder I needed. I needed to feel awful for a couple days for my brain to be like oh ya this is why we shouldn’t eat this crap 🙄 To remind myself why I started this journey: To feel good EVERY DAMN DAY 🌸⁣ ⁣ That’s not saying we all don’t need a treat every once in a while 😉 but Balance is Key. ⁣ ⁣ So if your like me and this winter is literally kicking your ass and making you struggle to get it together, let me help you, 🤗 I’ve been there, on both sides I know the struggle and I know the feeling when you are killing it and feel like a friggen superhero cause your jeans fit properly 👖⁣ ⁣ And dont we all wanna feel like a superhero everyday ?🦸🏻‍♀️ I know I do and I want to help you do it too. ⁣ ⁣ My next challenge group starts Monday so if your ready to find the balance you’ve been missing DM me to get started. ⁣
I think salads get a bad rap: they’re boring, they’re not satisfying, etc. And that may be true depending on what’s on your salad...a good salad is all in the toppings! I personally love salads and eat one several times a week for an easy lunch but I jazz it up with lots of delicious toppings! 1️⃣ It’s important to remember some type of a protein (chicken, fish, shellfish, meat, beans, tofu, eggs) 2️⃣ Load it up with veggies- whatever you have laying around works! Today I used artichoke hearts, orange bell pepper, mushrooms and green onions. 3️⃣ Add some extras- this can be anything such as nuts, seeds, fresh or dried fruit, #bacon bits, nutritional yeast, cheese, #hummus cooked quinoa or roasted potatoes. Today I used trail mix (seeds, nuts and dried fruit) and feta cheese. 4️⃣ Last but not least, a dressing. This is likely where your fat will come in so try to choose a healthy, plant source of fat. I topped mine with balsamic vinegar and olive oil, plus a sprinkling of dried basil 🌿 Salads are a great combo of veggies, protein, fat and carbs as long as you add a little from each category. Lets talk breakfast… 🍳 ⠀ When it comes to breakfast I usually focus around a good serving of protein to start my day off. More often than not, I’ll gravitate towards having oats with protein powder every morning because its cheap, convenient and easy to meal prep (I make it in the microwave at work) 🥣 ⠀ These are a few other ideas which I’ll either have on the weekend or when I’m travelling. ⠀ A new favourite of mine is greek yoghurt and frozen berries.. it’s super low calorie, gives a generous portion if I aim for 25g of protein and keeps me full all morning. 🙌🏼 ⠀ Do you already have one of these options for breakfast? I love how they self regulate their food intake, and it’s the reason I don’t stress when he chooses not to eat much of a meal. 𝗣𝗮𝗽𝗿𝗶𝗸𝗮 𝗖𝗵𝗶𝗰𝗸𝗲𝗻 𝘄𝗶𝘁𝗵 𝗥𝗼𝗮𝘀𝘁𝗲𝗱 𝗘𝗴𝗴𝗽𝗹𝗮𝗻𝘁 𝗮𝗻𝗱 𝗰𝗼𝗹𝗲𝘀𝗹𝗮𝘄 Sometimes I will buy vegetables with the intention to cook and eat them, but they just start to wilt and get limp before I have had the chance to cook them... So usually I will roast them with another dish in this case like I did the eggplant🍆 with the chicken... That way I dont have to waste the veggies😇 Othertimes I might make a soup, or a stir fry or just mix everything in my fridge for creative new dish etc. For the Chicken🐔 Marinade: 🌸2 chicken legs 🌸1 tbsp Paparika powder 🌸1 tsp Smoked. paprika*(optional) 🌸1 tbsp Mustard sauce 🌸4 tbsp Vinegar 🌸1 tsp dry thyme leaves 🌸1/2 tsp Salt 🌸Blackpepper to taste . 🌿1. Split the chicken leg and thigh at the joint, dab the chicken dry with a paper towel. . 🌿2. In a large bowl, mix the above ingredients and leave the chicken overnight in the fridge to marinate for maximum flavour or atleast 2hours if your short for time. 🌿3. For the Eggplant 🍆: wash it, cut it into half lengthwise, then quarters creating semi medium sized chunks. 🌿4. Preheat the oven to 180°C and roast the chicken set the timer for 25-30min or until chicken is fully cooked. 🌿5. Halfway through the chicken roasting time, add the eggplants( seasoned with salt, oil and blackpepper) and roast together with the chicken for the remaining time until chicken is fully cooked and Eggplants are roasted. Today is the day. That’s what I would tell myself. I would have my clothes laid out and then head to work. By the afternoon I was exhausted and starting to dread that workout I had planned. Then I would stay too late after work because something came up. I would sit in traffic on my way home. Walk into my house and be starving by this point. I would start making dinner and eat. Watch a little TV while it digests and then...I would look over at my workout clothes 😱 . I have found that it is a whole lot easier to choose you at the start of the day then the end. I never thought I could get up so early, but it’s gets easier and easier the more you do it! . My Top Morning Workout Tips: • Set your alarm 🚨 and put it on a desk or in the bathroom of your bedroom. Just far away enough that you have to get out of bed to turn it off! • Make it a routine you love. I love getting up an hour before I workout. I make my breakfast, read for 15 minutes, work on coaching work and then workout! It eases me into my morning and I love it because I don’t just roll out of bed and have to start to doing burpees 😅 • Find a pre workout you love 💕 My all natural liquid gold legit gets my booty into gear. I look forward to drinking it every morning! • Buy cute workout gear. When I get to wear something cute, I am definitely more willing to workout! Getting into your workout gear is half the battle. Put them on right away! • Music 🎶 or TV 📺 Sometimes I just need a distraction from the actual work lol. Have an amazing playlist that pumps you up or put on your favorite show. No worrying about headphones or if the WiFi is working because working out from home is the best! . It’s all about finding what works for you! If you can workout in the evenings that is amazing! You are magical unicorn🦄 to me! But if you are anything like me, maybe give morning workouts a try! I am curious, do you workout in the morning or the evening?

About dinner last night 😍 I LOVE to cook and really enjoy exploring in the kitchen and making up recipes and adding whatever feels right - I’ve got my mom to thank for teaching me her ways 👌🏻. Over the last 3 or 4 years though my cooking has drastically changed into healthier meals, but that definitely doesn’t mean things have to be boring. Now I just have to be a little more creative on how to make things taste just as delicious! For Valentine’s Day last night I made cucumber rolls with smoked salmon and goat cheese for an appetizer followed by grilled lamb chops (my absolute favorite and a V day tradition in our house) over cauliflower gnocchi with asparagus and mushrooms. It was phenomenal and stuck pretty close to our meal plan, too 🙌🏻. Anyone else out there like me and love to play around with meals instead of follow recipes? #teamworkforfit

Combined with warm cooked barramundi fillets and stir-fried vegetables (which l didn’t show inside the photo), is a well balanced healthy dine in dinner 🥘! . . Ingredients for fish: fish fillets, barramundi 1 + 1 Tbsp olive oil 1 Tbsp rice flour 1 Tbsp almond meal 1/4 tsp salt . . Ingredients for Tomato Sauce 2 fresh large tomatoes 🍅, chopped 1/2 brown onion, chopped 1 tsp tomato paste 1 tsp cornstarch 1 Tbsp cooking oil 1/2 tsp salt fresh coriander . . Method: 1. Season fish fillets with salt and oil. 2. Coat with rice flour and almond meal mixture. Brush with 1 tablespoon of olive oil. 3. Cook in easy cooker with skin side up for 25 minutes, 200C. Then 250C in 5 minutes. 4. In a saucepan, sauté onion in 1 tablespoon of cooking oil, until softened. 5. Add fresh tomatoes. Cook for 10 minutes. 6. Add tomato paste and salt. Cook for another 10 minutes 7. Thicken the sauce with corn starch 8. Purée with handheld blender. 9.
