Sometimes you just gotta keep it simple & whole 🙏🏼 Salmon is my absolute favorite protein and I’ve gotta say I think I make the best 😎 Not pictured: Bone Broth, because I still feel like 💩 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Stay Fit Stevi salmon recipe (below), sweet potato mash with @fourthandheart grassfed ghee and avocado sliced with crushed red pepper and @traderjoes EBTB seasoning ✨ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ✖️1 lb wild caught salmon ✖️1 Tbs @chosenfoods Avocado mayo (@primalkitchenfoods has a good one as well) ✖️1 Tbs organic stoneground mustard ✖️1 tsp dill weed ✖️1/2 lemon, juiced ✖️1 Tbs minced garlic ✖️Black pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Cover fish in marinade and bake at 400 for 20 mins. I pan seared my salmon after baking tonight for a little crisp on the top🤤

If you’re a mac n’ cheese lover like me, you’ve got to try this spicy, veggie packed version that is SUPER easy to make! I used @ancientharvest POW! Pasta for a protein & fiber packed base to the dish. While the pasta was cooking I sautéed frozen broccoli florets, chopped mushrooms, diced bell peppers, a big pile of baby spinach, & fresh garlic in some olive oil. Once the pasta and veggies were cooked I tossed them all in one pan and added a few wedges of @thelaughingcowusa pepper jack cheese. Once that is melted and all mixed in, all that is left to do is DIG IN!😋 Honestly, is there anything better than a spicy, creamy Mac & cheese that actually provides many health benefits?! This boy right here owns my heart. Between him & his sister, I am so full ❤️ I don’t have any human babies, but I have two fur ones who mean more to me than words can describe. They bring me so much happiness. All I want is to give them the best life possible ❤️ the other half of my heart belongs to my oldest baby, Lucy. I rescued her 8 years ago from a humane society. For the longest time it was me & her against the world. No matter what life threw our way, we’ve always had each other. This time last year we decided to expand our little family and we rescued this boy from the same humane society Lucy came from. They are both border collie mixes but they have two completely DIFFERENT personalities & I love them both so much. Lucy is extremely independent. She doesn’t like cuddles very much & she NEVER lets me get pictures 😩 I swear she knows when I whip out my camera 🤦🏼‍♀️ Clive on the other hand is the MOST affectionate dog to exist. He’s 70 lbs of pure unconditional love. He is a total lap dog and will cuddle for HOURS on end. Yesterday I wanted a banh mi for lunch but alas the banh mi lady was no where to be found, so I opted for com tam instead. I got an interesting mix of rice, egg and greens with surprising little octopuses hidden within. I do like seafood though, so it added a nice flavour. The egg was a little oily, but other than that it was a well-balanced, tasty meal 👌🏻

Tonight’s dinner!! . . I just made this delicious healthy meal with a simple recipe from the holistic health and nutrition program - The Healthstyle Emporium. 🍠 I love that they're all easy and free of nasty ingredients & everyone in the family approves! Here is the recipe: . INGREDIENTS 1kg butternut pumpkin (squash), peeled and chopped 2 tablespoons extra virgin olive oil sea salt and cracked black pepper 100g kale, stems removed and leaves torn 150g soft feta cheese, crumbled ⅓ cup (95g) caramelised onion relish 8 eggs 1 cup (250ml) single (pouring) cream METHOD Preheat oven to 220°C (425°F). Place the pumpkin in a 30cm heavy-based shallow pan or baking dish, drizzle with oil and sprinkle with salt and pepper. Cook for 20 minutes or until the pumpkin is light golden and just tender. Remove the pan from the oven and reduce oven temperature to 200°C (400°F). Add the kale, feta cheese and caramelised onion to the pan and mix gently. Place the eggs, cream, salt and pepper in a bowl and whisk to combine. Pour the egg mixture over the vegetable mixture and cook for 30–40 minutes or until puffed and golden. Serves 4–6.
