Asian food takes a lot of prep works & ingredients. For this Vegan Vietnamese Vermicelli dish, it took four different parts & all of these ingredients: . @tokenbento hat ein interessantes Rezept gefilmt, in dem sie "Umami-Butter" gemacht hat: Geschredderte Shiitakepilze, Nori und Gomashio (Sesamsalz) vermischt mit Butter. Das wollte ich auch mal ausprobieren (mit Margarine), mein Mixer hat die trockenen Zutaten sofort pulverisert 😅 Größere Stücke wären eigentlich nicht schlecht gewesen, da ich das im Endeffekt nicht so stark rausschmecken konnte, aber vielleicht hab ich auch zu wenig genommen. Die Kombination aller Komponenten in dem Gericht war aber mega gut! * * * For this dish I tried to recreate the "umami butter", that @tokenbento shows in one of her recipe videos. It's shredded shiitake mushrooms, nori and gomashio (sesame salt) mixed with butter (or margarine in my case). My blender pulverised it instantly, maybe bigger pieces would have been nice. This Indian/Himalayan restaurant, Mission Curry House, has this dish called Jeera Aloo (Potatoes) and it's delicious!! We also ordered Aloo Baingan, Vegetable Momos, Plain Rice and Jeera Rice. The momos were filled mainly with cabbage and some other veggies. Great appetizer! Not hearty but I still liked it. Loved everything but our favorite was the Jeera Aloo! Never seen this on and Indian menu before, so good! It's cumin based. Tempura enoki for weekend snack, anyone ? Love to deep fry my enoki in a bigger bundle so it can be very crispy on the outside, and juicy on the inside without losing the taste of enoki. Yum! 😋 ______________________________ Key ingredients: 🌱 Enoki 100g (half of a pack) 🌱 1 cup of Tempura powder 🌱 1 cup of water 🌱 1 tsp of salt 🌱 White pepper Optional: 🌱 Seaweed flakes 🌱 Sesame seeds 🌱 Scallions _____________________________ Steps: 1. Cut off the root of enoki mushrooms (make sure the attachment at the end wasn't cut off completely, else the enoki will not stay together for this shape). 2. Rinse with water and tap dry. 3. Tear the enoki mushrooms into desire amount, (the smaller the bundle the crispier it will be). Sprinkle a pinch of salt and pepper. Set aside. 4. Pre heat oil in a pot until the oil is bubbly. 5. Meanwhile, add in tempura flour and water into a mixing bowl and mix well. 6. Coat the enoki mushrooms with the tempura mix and deep fry them until golden brown 7. Sprinkle some seaweed flakes, sesame seeds and spring onion 8. I took a trip to La Rochelle for my vacation and never expected I could have an excellent asian-vegan meal! TBH, I even brought some rice for a five-day trip. Anyway, this place has a separate vegan menu! 👏 I had sweet and sour tofu and fried chinese cabbage. It was even better than what I had at asian vegan restaurants in Paris. WE KNOW HOW TO COOK TOFU! Oh oh and of course I ordered sticky rice since it’s the best 🍚

I feel like I just leveled up on my korean vegan game. Made a delicious version of the korean banchan sweet soy glazed bb anchovies using dried radishes. I used them to make “꼬마김밥” which literally means kid kimbap because they are smaller than regular kimbap (kimbap is Korean equivalence to maki rolls for those unfamiliar. The fillings are seasoned and you eat it as is without dipping it in anything.) 🏠 HOME COOKING : VEGAN NOODLES 🏡 By @vegetarianhotspots - Stir Fried Inspired Noodles without the faff 🍜 - Ever fancy noodles 🍜 but can’t be bothered with the faff 😫? Well this is my easy ✅ solution to those cop out noodles - I don’t even use a wok 🙅🏽‍♀️. I know for some, this will upset 😢 , but when I’m hungry I need food ASAP 🕣. I make this with mushrooms 🍄 and spring onions, but you can really add whatever you want in it. Works well with peppers too 👌 - INGREDIENTS 📝 - * Mushrooms 🍄 * Spring Onions * Soy Sauce * Rice Stick Noodles * Chilli 🌶 * Sweet Soy Sauce (essential) * Garlic * Sesame Oil (can use vegetable or sunflower 🌻 too) * - Method - literally takes 15 minutes ✅ 👌🏽 - 1️⃣. Put a tiny bit of oil in a pan - add mushrooms 🍄, spring onions (the white part) garlic, chilli 🌶, salt and pepper - season to taste * 2️⃣. Add Soy Sauce * 3️⃣. In a separate pan cook the rice stick noodles - don’t cook them through fully, leave them a little bit al dente * 4️⃣. Drain the water 💧 from the noodles and rinse the noodles in cold water (stops from sticking) * 5️⃣. Add noodles to the mushroom 🍄 mix * 6️⃣. Add sesame oil - this stops the noodles sticking together * 7️⃣. Add the sweet soy sauce * 8️⃣. Put the lid on until the noodles feel cooked ✅ * 9️⃣. Add spring onions (the green part.) - 🔟. Not just the best Vegan I've had, the best Asian food in Brooklyn period. A8 Pan Asian Vegan on Prospect Park W between 16 and 17th . . . We had salad, drunkin noodles, pineapple fried rice, insane Vegi mooshu and vegan raspberry cheese cake. I am truly stunned that this little place is so very good. All made from plants! 😇 Served these with my 5 spice peanut sauce (recipe #linkinbio ), these were a hit with everyone, despite my personal critique of my rolls (I had to use a different wrapper from my usual, so it was harder for me to make nice rolls, LOL). 🙏🏼 . . Thai Basil Tofu (Pad Krapow) 🍲 𝐃𝐢𝐬𝐡 𝐍𝐨𝐭𝐞𝐬 • Usually made with chicken • One of the most popular Thai street dishes • Universally known as Holy Basil Stir Fry 𝐑𝐞𝐜𝐢𝐩𝐞 (𝟐 𝐬𝐞𝐫𝐯𝐢𝐧𝐠𝐬) 1. Press 300g Tofu to drain excess water 2. Cut pressed tofu into cubes, toss with oil, salt, white pepper, cornflour 3. Mince 5 garlic cloves, 6 birds-eye chillis (food processor, finely chopping, or mortar & pestle are all fine although M&P will produce best result) 4. Fry tofu in wok to crisp up; add garlic/chilli 5. Add 125g green beans, 1 cup bean sprouts; stir-fry 6. Add 2 tbs vegan oyster sauce (easy to find at Asian supermarkets), light soy sauce to taste, dark soy to taste, and 1 tsp palm sugar 6. Turn off heat, then add two handfuls Thai Basil leaves 7. Serve with rice 𝐆𝐞𝐭𝐭𝐢𝐧𝐠 𝐢𝐭 '𝐫𝐢𝐠𝐡𝐭' • Pressing the tofu will help it crisp up; so will the cornflour • Using a mortar & pestle will release oils that make the dish more fragrant and flavourful (if you don't have M&P chop very finely or use a food processor) • Make sure you turn the heat off before adding the basil... the residual heat from the pan will wilt it. If you don't you risk overcooking it and lessening the flavour

SICHUAN DRY-FRIED GREEN BEANS, aka my favorite dish to order at Chinese restaurants. traditionally the beans are fried in deep oil to get that withered exterior, but I wanted to make a healthier version— in this method you pre-blanch the beans before stir-frying, and they come out tender and blistered and just as delicious without all that oil. . (for authentic flavor I highly recommend the Sichuan preserved mustard greens {ya-cai} as they add a deep umami and salty funk, but if you can’t find it substitute fermented black beans instead, or simply leave it out). recipe is below and in my newest blogpost, enjoy 🐇 EDIT: check out my stories to see the cooking process! . . Sichuan Dry-Fried Green Beans 1 lb (450g) green beans 3 scallions, white parts only, thinly sliced 3/4 tsp whole Sichuan peppercorns 3 cloves garlic, minced 4 dried red chilies, de-seeded and cut in half 3 tbsp Sichuan preserved mustard greens, chopped finely, or 2 tbsp fermented black beans (optional) 1 tsp minced or grated fresh ginger 3 tbsp cooking oil 1 tsp sesame oil 1/2 tsp salt, plus more to taste Rinse the beans, trim off the ends on both sides, and snap each in half. Bring a pot of water to a boil over high heat, and add salt to the water. Blanch beans until vibrant green and tender (about 3 minutes) then remove from pan and let drain. Pat dry to remove moisture. In the meantime, mince and chop the scallions, garlic, and ginger, and de-seed the chillies. Heat 2-3 tbsp oil in a wok or pan over high heat until shimmering, then toast chilies and Sichuan peppercorns until fragrant and darkened. Add scallions, garlic, and ginger, and stir-fry briefly, then add blanched beans and stir-fry for two more minutes. Remove from heat, stir in the sesame oil, and season with salt as needed. Transfer to a plate and serve hot.
I have this very faint memory of a noodle dish that had shreds of scrambled eggs in it so I decided to make my own. Turned out fabulous! I love the inclusion of the shreds of @justforall egg!! I also have cabbage, mushrooms and carrots in there along with a Thai soy sauce, dark soy sauce, vegetarian oyster sauce and sesame oil. Soy chorizo spring rolls! We love the soy chorizo from Melissa's Produce and have been trying to think out of the box with regards to new palm free, vegan recipes. We filled these spring rolls with green leaf lettuce, jalepenos, cilantro, snow pea shoots, cooked white mushrooms, avocado, cucumbers and paired it with peanut dipping sauce (watch for palm oil here), pineapple slices sprinkled with lemon juice, sea salt and red pepper flakes and sliced cucumber and avocado salad topped with lemon juice, sea salt and cilantro.
